                          Christmas Day Menu

    Seared west coast scallops with horseradish mashed potatoes, parsley juice
                           and a grain mustard dressing

     Roast parsnip and green pesto soup topped with toasted flaked almonds

           Warm salad of wood pigeon and prosciutto ham dressed in a
                          split marsala wine dressing

Char grilled asparagus spears and poached quails eggs glazed with hollandaise sauce

                     Raspberry sherbet and champagne sorbet

              Roast East Lothian turkey with traditional trimmings

        Pan fried tournedos steak Rossini topped with a foie grass crouton
                      and served with a rich red wine sauce

             Seared supreme of halibut with olive ĕcrase potatoes and
                       topped with a creamed lobster sauce

         Roast crown of patridge filled with a cranberry stuffing nestled
                      on a bed of ribbon crisp vegetables

     Mushroom casserole and julienne of vegetables in a creamed paprika sauce


         Duo of white and dark chocolate mousse with white truffle sauce
                           and a cointreau ice cream

             Traditional Christmas pudding with a rich brandy sauce

           Caramel and orange cheesecake with a vanilla crème anglaise

        Selection of continental cheese and biscuits served with fresh fruit

                            Coffee and mincemeat pies
