									Irish Tea Cake Recipe


500g Dried sultanas or mixed fruit
400ml Boiling water
2 Teabags
200g Muscavado sugar
250g Self raising flour
1 Egg
½ tsp Mixed cake spice

Oven Temperature: 1750C

   1. Brew tea

   2. Remove tea bags and add tea to a mixing bowl with the dried fruit

   3. Leave to soak for a minimum of 2 hours but preferably overnight

   4. Mix in the sugar, egg and spice

   5. Next add the flour and mix well

   6. Add mix to tin lined with greaseproof paper and bake for approximately 1½ hours

   7. Remove from tin and allow to cool

   8. Serve sliced like a bread loaf and spread with butter.
One Stage Biscuits


115g Soft Margarine
115g Caster Sugar
225g Plain Flour, sieved
1 egg, beaten

Oven Temperature: 1900C

   1. Place all ingredients together in a mixing bowl

   2. Mix together with a wooden spoon to form a soft dough

   3. Turn out onto a lightly floured board and knead together with fingertips to form a smooth

   4. Roll out fairly thinly

   5. Cut into desired shapes and place on greased baking sheet

   6. Cook for 12 -15 minutes on second shelf from the top of oven

   7. Cool on a wire tray.
