Happy Thanksgiving!
n elementary school we were taught about the pilgrims who docked at Plymouth Rock, and how those pilgrims gave thanks in a celebration with the Indians. And we called it Thanksgiving. Today’s Thanksgiving is quite different from the first; our menus are filled with perfectly roasted turkey, seasoned mashed potatoes, soft and delicious cornbread stuffing, to die for desserts, and good ole American football. And let’s not forget that ever famous nap time, in between half time! This Thanksgiving, come out and join us at the Club. Our Thanksgiving Family Buffet is a Club tradition and a popular family event. Seating will be available throughout the Clubhouse, upstairs and downstairs, and reservations are an absolute must.

ovember signals the onset of many things. It marks the beginning of what we have come to know as the true fall season in North Florida. Everything, including what we wear to what we eat, begins to change just a bit. The wonderful season of Thanksgiving is just ahead (or, one might suggest, is just “over the river and through the woods.”) And, unavoidably, the holiday season looms on our mind’s horizon as we struggle to accept that another year is coming to a close. The realization that another year is moving to a close finds me, frankly, a bit pensive. And as I write this month’s letter, I have begun to look back on this year and have come to recognize one of the characteristics of our Club that makes it truly unique. During its 131 years, The Florida Yacht Club has established many customs and traditions that we embrace. Some are ancient, formal traditions, such as the Club’s Annual Christmas Ball and the presentation of Jacksonville’s Debutantes. Some are more contemporary and informal, such as Wednesday night fried chicken night. Some of these occur weekly, such as the men’s and women’s weekly tennis clinics; some take place every month, such as the wonderful wine dinners; and some we look forward to once a year, such as the Orange Peel and King’s Day regattas and the Steeg Member-Guest Tennis Tournament. And all of these, to our delight and anticipation, continue to appear on our calendars week after week, month after month and year after year. The fact that we have many wonderful events and activities that are repeated regularly does not alone make this Club unique. This aspect of club life is typical to all clubs. But what is unique is how The Florida Yacht Club is able to infuse the rhythms and patterns of its Club life into the lives of its Members. When a club has the good fortune to have an outstanding management team and a talented staff, who continually demonstrate their considerable skills to an appreciative

Under such circumstances, a Club’s continuous echo of outstanding activities and events serves to hypnotically seduce the membership into incorporating these events into their lives, each week, each month and each year. Before you know it, the lives of the members share the same rhythms and patterns as those of the Club. This produces members that are genuinely committed to and engaged in the life of the Club and its culture. And, perhaps just as importantly, produces members that will remain members for life. And THAT is what every club tries to do. And THAT is what I believe happens at the Florida Yacht Club and has been happening for almost 131 years. Allow yourself and your family to be enchanted by your Club’s charm and its enticing offerings. November and the upcoming Holiday season will provide a number of wonderful events for all of our Members to enjoy. I promise you won’t be disappointed. I will share with you at the commencement of this season of Thanksgiving a quote from one of our greatest Presidents reminding us that true gratitude is expressed through one’s actions: “Let us remember that, as much has been given us, much will be expected from us, and that true homage comes from the heart as well as from the lips, and shows itself in deeds.” ~Theodore Roosevelt I look forward to seeing all of you around the Club.

We will put on our famous grand buffet with all our celebrated treats. Also this month, we have an early wine dinner featuring a variety of wines and cuisines from Napa Valley. And just when you thought that it couldn’t get any better, our mouth-watering Oyster Roast is on November 30th. 7 rules for PerfecT PaIrINg
PAIrING ruLe #1 Serve a dry rosé with hors d’oeuvres Good rosé combines the fresh acidity and light body of white wines with the fruity character of reds. This makes it the go-to wine when serving a wide range of hors d’oeuvres, from crudités to gougères. PAIrING ruLe #2 Serve an unoaked white with anything you can squeeze a lemon or lime on White wines such as Sauvignon Blanc, Albariño and Vermentino (typically made in stainless steel tanks rather than oak barrels) have a bright, citrusy acidity that acts like a zap of lemon or lime juice to heighten flavors in everything from smoked sablefish to grilled salmon. PAIrING ruLe #3 Try low-alcohol wines with spicy foods Alcohol accentuates the oils that make spicy food hot. So when confronted with dishes like a fiery curried chicken or Thai stir-fry, look for wines that are low in alcohol, such as off-dry German Rieslings (especially since a touch of sweetness helps counter spiciness, too). PAIrING ruLe #4 Match rich red meats with tannic reds Tannins, the astringent compounds in red wines that help give the wine structure, are an ideal complement to luxurious meats—making brawny reds like Cabernet Sauvignon and Syrah great matches for braised duck legs or pan-seared sausages. PAIrING ruLe #5 With lighter meats, pair the wine with the sauce Often the chief protein in a dish – chicken or pork, say – isn’t the primary flavor. Think of pork chops in a delicate white wine sauce versus pork chops in a zesty red wine sauce; in each case, the sauce dictates the pairing choice. PAIrING ruLe #6 Choose earthy wines with earthy foods Many great pairing combinations happen when wines and foods echo one another. Earthiness is often found in reds such as Pinot Noir (particularly from Burgundy) and Nebbiolo, making them great partners for equally earthy ingredients, like bison steaks or wild mushrooms. PAIrING ruLe #7 For desserts, go with a lighter wine When pairing desserts and dessert wines, it’s easy to overwhelm the taste buds with sweetness. Instead, choose a wine that’s a touch lighter and less sweet than the dessert—for instance, an effervescent Moscato d’Asti with roasted pears.

This month the cooking class is a week after Thanksgiving, November 29th. I know it’s too late for leftovers but I still love them! Our focus this class will be sandwiches. Let’s make one with turkey, but leave the center of attention to creating new and tasty sandwiches. And yes, some will be finding ways to use up those ever accumulating leftovers that are taking over your refrigerator. Sandwiches are a delicious, fast and easy meal or snack; we eat them at home or while dining out. This month we’re adding a new twist to some old favorites, so come by and see what new ideas and different flavored condiments can do to spice up your snack. Happy cooking!

Annual Charity Brunch to Benefit the Donna Hicken Foundation
Friday, November 30th, 11:00 am Donna Hicken, First Coast News Anchor, author, and two-time breast cancer survivor, will be our guest speaker. Her foundation’s mission is “Caring for Women Living with Breast Cancer” in the Jacksonville area, and it assists women undergoing treatments for cancer by helping them with mortgage payments, utility bills, and everyday expenses. The holiday season is a good time to get together with your Yacht Club family and celebrate the giving of the Christmas Season, so please reserve a table for your friends, co-workers, and family to support this more-than-worthy cause. The cost of the brunch is only $30, and you may call the Club at 387-1653 to make reservations. There will be a fashion show, raffles, door prizes, and signed copies of Donna’s book to purchase for Christmas gifts.

MASSAGE THERAPY AND STRESS MANAGEMENT
Continued from last issue... A person who is frequently under stressful influences will tend to remain locked into a pattern of stress response, unable to relax or let go. This type of pattern is damaging to the body; as it escalates, it ultimately leads to discomfort or pain, and is a contributing factor in most diseases. In Our Everyday Experience Like driving a car with one foot on the gas and the other on the brake, we experience stress whenever we initiate an action and hold it back at the same time. Our ever-
obedient muscles try to act upon both messages and work against each other. In the same way, we have our own unique muscular responses to the expression of emotions such as anger, sadness, fear and exhilaration. We use our muscles to block, control and restrain these strong feeling and our reaction to them. Even though we may be unaware of the amount of tension we store within, it puts extra wear and tear on both mind and body. Maintaining these patterns of chronic tension is like leaving the lights on all night - it takes energy; but once it’s a habit, we no longer recognize it as such. What we do notice are the aches, pains, fatigue, headaches, digestive problems, PMS, or a host of other stress-related symptoms. These symptoms are important signals to be heeded, rather than ignored or bypassed. Accumulated stress and tension always diminish the amount of energy and vitality we have to enjoy life, be creative and productive and strive for better things.
The Relaxation Response The antidote to stress is known as the relaxation response, which is triggered by the parasympathetic branch of the nervous system. This action sends messages to the body to slow down and take a deep breath: saying in effect, “it’s time to relax, rest and heal”. There are a number of ways to promote this response, such as exercise, meditation, listening to calming music, guided visualization, biofeedback, and of course, therapeutic massage. All of this results is greater body awareness, which helps us to more carefully monitor our own body’s responses and needs. Living in a more relaxed and balanced body will enable us to better handle the stresses in our life, and nothing can take you back to that state of well-being quicker than massage.

hings are starting to finally cool off and we’re getting geared up for the fall sailing weather. One of our famous Fall Regattas is Kings Day, which will be held November 16th through the 18th. There will be separate race courses for each class, Melges 24 and J-24’s, which means the river will be full of sailors and boaters. We are still looking for weekend volunteers to assist the Race Committee for the Kings Day Regatta, whether you would like to lend a hand and/or your powerboat, all are welcome. If interested please give me a call (904) 387 -1653 ext. 25 or email sgaines@thefloridayachtclub.org. This is a great training event and I want to encourage everyone to get involved. Sailors come from around the world to partake in this event, and so should you. The Club has recently instituted a policy for all boaters that store their vessel at the facility. The Severe Weather Plan is an “individual’s plan” for such cases of bad weather, hurricanes and tropical storms. Not only is it for the protection of the boat owner but the Club’s property and facilities as well. Most of the members who have stored their vessels at the Club have complied with this policy, but there are several who have not returned the form. All stored boats at FYC wet and dry storage must have this policy completed. Good news is the dry storage area will be getting a makeover very soon. November 5th we will repave, resurface, restripe, and reorganize the dry storage parking area. Over the past couple of years, our boats have been getting bigger in size and therefore take up more space. In this makeover, we plan to make it easier to park, along with reorganizing the spaces, and we will be gaining a few extra spots. Security cameras and extra lighting will also be installed to offer more protection for your vessel. Unfortunately, all boats will need to be removed for this process, but it should only take a few days. I will send out letters to all dry storage boaters once the dates are set for the resurfacing. Looking for a fun theme for junior’s birthday party? Try our tennis birthday party, coordinated by one of our staff professionals. The tennis staff will customize a fun on-court event that is sure to make a child’s birthday a huge success. Ages range from 3 to 12. Tennis experience is not necessary. We will provide rackets, balls, and prizes. For more details call the pro shop 389-4281.
Junior News
The FYC zone teams have been on a tear! In the previous USTA tournaments, the zone teamers have been making us proud. Elizabeth Jones won the 18 & under division and Ann Clements took the 16 & under division without loosing a set! James Plyler, Catherine Jones, Hunter and Kylie Geddes, and McKenzie Barco also had a fantastic showing. A special congrats goes to McKenzie Barco, Ann Clements, Tyler Stephens, Rashad Shelton, and Claire Maxwell, as each qualified for the state sectional championships. Our Jr teams kicked off their fall season. All three teams started with a win!! Great Job Kids!
Player of the Month
Congratulations to Crandy Wheeler! If you are looking for a person to model your game after, Crandy Wheeler is your best bet. You may find her taking a lesson, working on the ball machine, or pounding out mile after mile in the FYC gym. Crandy is a delight to work with and always has a smile beaming for all to see. Thanks for all your help with the FYC tournament. Your efforts were greatly appreciated.

or the sanity of the tennis pros and all of our tennis enthusiasts at FYC let’s hope that November has better tennis weather than October. Just when we resurfaced all of the courts and tried to get the fall season rolling, we experienced the torrential down pours of October. Thank you to everyone for your patience as we repaired the washed out lines with new material. Also to all who participated, thank you for your patience in dealing with rain delays and rescheduling of the Doubles Club Championships. Maybe all of the kidding around about building a bubble over some of the courts is not that crazy of an idea!! The great Singles Club Championships tradition will be held this month. As usual, all levels will be offered from A - D. Men and Ladies competing for the coveted title of the FYC Singles Club Champion! This will be our final of the four major grand slams. It will be followed by our very popular year end Christmas Banquet, December 14th. All 2007 Club Champions and finalists will be honored. Did I just mention Christmas? Is it really that time of the year again? I thought that we just did this? While we are on the subject, remember the great gift ideas at the tennis pro shop. Look for new FYC logo items, as well as tennis equipment and lesson packages. Gifts that all FYC tennis fans would like to see under their tree or in their stockings! We even offer free gift wrapping. I would like to thank Sarah Trent and the working women’s B team for hosting the Annual Donna Hicken Luncheon, benefiting Donna’s breast cancer foundation. This is the fourth year that we have held this event, and helped raise thousands of dollars for this great cause. I know our ladies put in a lot of effort in making this event a huge success. I hope to see all of you out supporting Donna and her foundation. There are some great prizes to walk away with! I would just like to remind everybody that we will lose day light savings this month, on November 4th. This is the time of the year that the tennis light charges will be billed for all team players that use the lights. As usual, the tennis staff and I are here to provide the highest quality program for our members. We are here because of our love of tennis! We love to coach, play and talk tennis! It is our hope that you share this passion. If there is anything that we can do to help make your tennis experience at the Club better please don’t hesitate to let us know. We value your input! My name is Frank Vermeer and I started workin g at the Club as a tennis coach on the 16th of October. I was born and raised in the Netherlands living in the southern part of the country close to Rotterdam. It has always been a dream for me and my family to come to Florida and live here in the United States of America. I am familia r with Jacksonville because I used to study at UNF in 1985-1988 before returni ng to the Netherlands to join the army. I have also visited the Florida Yacht Club with students of my High Performance Academy in 1998 and 1999. I have played Junior Tennis all over Europe, Colleg e Tennis for UNF where I was ranked # 1 in the nation in 1987 NAIA and have played professionally until starting my own High Performance Academy in 1992. I am also still active as a senior player coming in third at the latest World Cham pionships in Manavgat, Turkey. As a Coach I have been working with players of different levels for over 18 years. Helping youngsters to get their first lessons up until coaching Petra Kamstra, a fourth round Wimbledon and WTA 70 ranked player. I hope to develop myself as a coach here at the Club working with skilled and motivated people in a beautiful environment believi ng I can help and teach players of all levels and add to developing and further improv ing the tennis program at the Club. I am looking forward meeting you and am thrilled to get started. I would like to take this opportunity to express my gratitude towards the members of the Club and especially to John and Louis for putting in a lot of effort to help me get my visa. Sincerely yours,
