Food is culture!
People might wonder why we are putting a recipe from the North
(parmigiana means “from Parma”) as the typical recipe from Sicily.
There are many theories regarding the name and origin of this
dish: someone states that “parmigiana” is the particular way
people from Parma bake sliced vegetables - in layers. Others
believe that “parmigiana” actually derives from the Sicilian
dialect “parmiciana”, meaning the slats of a wooden shutter which
resemble the layering of the slices of eggplant in the dish.
Finally, others believe that the recipe is actually from Naples, since
it uses the typical mozzarella cheese.
Do you have your own explanation of this complicated enigma?

Settimana Italiana - Summer Immersion Programa for Adults
Whether it be cooking, playing bocce or touring Vancouver, our
Italian full-immersion program for adults had it all this summer! For
five full days, 6 hours per day, the students enrolled in Settimana
Italiana enjoyed a wonderful syllabus coordinated by instructors
Liana Sammartino and Daria Capostagno. The focus of the program
was on enhancing spontaneous conversation in Italian and no
effort was spared to reach that goal! We even went on a trea-
sure hunt, which involved grammar exercises and role playing.
And what about Italian cuisine? That too was naturally part of
the program. Guided by our lovely volunteer Carla, we learned
to make home made Italian tagliatelle, we visited the Italian bak-
ery shops around Vancouver and also enjoyed a delicious lunch at
neighbouring Dario’s La Piazza Restaurant.
Judging from our participants’ feedback, the program was a great
success, a good blend of study and practical language application.
A PRESTO o our returning students – we’re already looking forward
to the next Settimana Italiana!
