Why Use Release Agents?
Dough placed on a sheet or in a tin, is in direct contact with the steel and will stick. However, once a crust is formed it no longer sticks. Crust formation starts at around 60˚C. Release agents prevent the bread sticking before the crust has developed. Traditionally fats and oils were used, however they have a number of features that are detrimental to the baking process and the end product. Oils are too thin and sink to the bottom of the tin. This can make the crust tough and cause unpleasant flavours to develop. Exposing oil to high temperatures causes blackening or Carbonisation, Oxidation identified by an unpleasant rancid smell and Polymerisation where the tins become sticky, attracting dirt and dust. Quality release agents are stable products, which do not separate or breakdown. They are easy to use and spray-able, but thick enough not to cause excessive misting. They are hygienic in use, with reduced Carbonisation, Oxidation and Polymerisation. Most importantly they give good release of the baked product. For bread, emulsion release agents such as Carlo are recommended. Carlo aids crust formation and crust colour development through the maillard reaction. For pastry and other hard to release products an oil wax blend such as Carlex is to be recommended.
