Notes on Allergens ((taken from Food Standards Agency Document “Guidelines on Allergen Control and Consumer Information” – Sept 2005)
1 Cereals containing gluten (wheat / rye / barley / oats / spelt / kamut or their hybridised strains) • Some foods and derivatives made with this allergen that can trigger allergic reactions are Flour: Starches: Bran: Bread (Breadcrumbs): Semolina: Cous cous: Hydrolysed vegetable protein (if made from wheat) • NB: There is Codex Alimentarius standard for Gluten Free Products which states that these can be produced from gluten containing cereals which permit a maximum of 200ppm in the final product Crustaceans (includes all species e.g. lobster / crab / prawns and langoustine) • NB: some people who react to crustacea also react to molluscs e.g. mussels Fish (fish – all species / fish extracts / fish sauce / fish paste / Worcester sauce (some brands) / omega-3 rich oils derived from fish) • NB: fish gelatine is often used as a carrier for vitamins and flavours but is unlikely to cause an allergic reaction • Fish allergy often results in anaphylaxis and only 1g of whole fish is needed to trigger a reaction Eggs (egg powder / dried egg / pasteurised egg / albumin / egg glaze / mayonnaise / lecithin (E322) if made from eggs • NB egg allergy is common in young children but more than half grow out of it by the age of 3 Peanuts (also known as ground nuts and monkey nuts) (unrefined cold pressed peanut oil (also known as arachis oil) / peanut butter / peanut flour / various peanut protein products / satay sauce / refined peanut oil (this has not been exempted although most peanut allergic customers do not react to it) • NB: peanuts cause severe anaphylactic reactions and are the most common cause of fatal food allergy • A significant proportion of people with peanut allergy are also allergic to tree nuts and heat treatment especially roasting increases the allergenicity of peanuts Nuts (Tree nuts: almond / hazelnut / walnut / cashew / pecan / Brazil / pistachio / macadamia / Queensland) • Found in nut butters / praline / marzipan / nut essences and flavourings / nut oils / Worcester sauce (some brands contain walnuts) • Capable of producing severe anaphylactic reactions • NB: other nuts such as pine nuts / chestnuts and coconut are not covered by the legislation

7 Celery and Celeriac (celery powder / celery seeds / celeriac powder) • Celery allergy is not common in the UK but is a common cause of oral allergy syndrome in mainland Europe. Symptoms range from mild to severe Mustard • (mustard paste / mustard seed / mustard powder / mustard flour / mustard leaves) • Not common in the UK but more common in France – can cause severe (anaphylactic) reaction Soya beans ( soya flour / soya tofu / soya protein isolates / soya protein concentrates / textured soya protein / hydrolysed vegetable protein – if made from soya / soy sauce / lecithin (E322) – if made from soya) • NB: soya allergy is more common in children, but they often grow out of the allergy by 2 years of age. Symptoms are usually mild Milk (whey / caseinates / lactose / butter / cream / cheese / yoghurt) • Cows milk is the most common allergy in young children. About 87% of children grow out of milk allergy by the time they are 3 years old • NB: Some people cannot tolerate milk because they lack the enzyme which breaks down lactose a sugar found in milk (all types of milk including goats’ and sheep’s’) – this is an intolerance to milk not an allergy Sesame (sesame seeds / sesame oil / sesame paste / tahini / houmus / halva ) • Allergy to sesame is increasing in the UK and can cause severe reactions including anaphylaxis Sulphur dioxide and sulphites (> 10mg / kg sulphur dioxide (SO2)) • E220 sulphur dioxide • E221 sodium sulphite • E222 sodium hydrogen sulphite • E223 sodium metabisulphite • E224 potassium metabisulphite • E226 calcium sulphite • E227 Calcium hydrogen sulphite • E228 potassium hydrogen sulphite • Sulphur dioxide and sulphites used in many foods as preservatives including dried fruits and vegetables, soft drinks, fruit juices, fermented drink (wine, beer and cider) sausages and burgers • Symptoms generally are asthmatic responses but can be severe in some cases
