					Brown Rice Chicken Bake
2 small chicken breasts 3 cups cooked brown rice 1 (10 ounces) package frozen green peas ½ cup reduced calorie mayonnaise 1 teaspoon lite soy sauce ¼ teaspoon black pepper ¼ teaspoon garlic powder Nonstick cooking spray 1. Remove skin from chicken if not using skinless chicken. Bake, boil, or microwave chicken and set aside to cool. Remove chicken from bone if not using boneless and chop. 2. In medium pot of boiling water, cook rice according to package directions. Do not add salt to water.   3. Combine chicken, rice, peas, mayonnaise, soy sauce, pepper, and garlic powder in bowl.   4. Coat 3 quart baking dish with cooking spray and put rice mixture in dish. Cover and bake at 350°.
