                             Indicative Job Description

This is a new post within the catering operation of Pitlochry Festival Theatre. The
Theatre has enjoyed a period of sustained growth in its evening and daytime trade.
We are now looking for an individual who can further enhance this growth with new
ideas and practices and with the desire to continue to improve the quality of the
dining experience and to ensure customer satisfaction.

Overall role
The Head Chef is responsible for assisting the Head of Catering in ensuring the
effective and efficient management and delivery of Pitlochry Festival Theatre’s
Catering Services. PFT is committed to achieving the highest standards in all areas
of its operation and the Head Chef has a key role to play in ensuring that the quality
of food and catering meets these standards.

The Head of Catering is line manager for this post.

The Head Chef is line manager for kitchen staff.

Principal Responsibilities
 To manage the kitchen staff and ensure agreed standards are achieved
 To develop menus and products to suit the Theatre’s activities and maximise both
   quality and profitability
 To assist in the achievement of agreed turnover and margin targets
 To ensure compliance with all legislation regarding food safety management
   systems as required by the Environmental Health Office
 To promote and participate in an alert and positive approach to Health & Safety in
   the delivery of all PFT’s catering services.

In pursuit of the above the Head Chef’s duties will include:

Kitchen Management and Food Preparation
 Ensuring that all food products are prepared and presented to high standards
 Menu planning, including evening and daytime menus
 Monitoring margins
 Ensuring effective stock control
 Ensuring equipment is properly maintained and operated

Staff management
 Providing effective management for all staff reporting to this post
 Preparing weekly staff rotas for kitchen staff
 Motivating, managing and training staff to ensure targets and standards are
 Supporting PFT policies designed to uphold staff welfare, development and
 Ensuring compliance with relevant legislation and equality of opportunity in all
   areas of responsibility

Health & Safety
 Ensuring the highest standards of hygiene and safety within the kitchen areas
 Implementing PFT’s Food Safety Management System, ensuring compliance with
  Environmental Health and other legal requirements
 Promoting and participating in an alert and positive approach to Health & Safety
  and appropriate working methods at all times
 Assisting with risk assessments for the department
 Maintaining daily checklists and ensuring relevant paperwork is maintained
  accurately and up-to-date.

 In conjunction with the Head of Catering and marketing staff, to increase catering
  turnover, particularly through the development of day-time trade, non-theatre
  related evening trade, and groups and coach business.
 Liaising with the Marketing Department on promotions to increase Catering or
  other turnover
 Ensuring efficient delivery of any other tasks reasonably requested by the Head of

Essential Skills and experience
 Minimum of 4 years experience at 2 nd chef or above
 College trained to acceptable standard
 Knowledge of food safety requirements and legislation
 Experience of menu planning and understanding of pricing, margins and factors
  affecting profitability

Desirable skills and experience
 Experience of catering for banqueting and conferences
 Experience of working within a large commercial operation

                           Basic Terms and Conditions

 Salary circa £16,000 plus performance related bonus
 40 hour working week with split shift working
 20 days holiday pa, plus 9 public holidays (N.B. up to 5 days of annual leave must
  be taken during Christmas and New Year period when the building closes
 The post is subject to a 6 month probationary period.
