With the Classic Cellar Collection we try to balance the selection between wines that show potential to age, with some wines that have been aged, and in some instances with wines that are ready to drink now. The Jacob’s Creek Steingarten Riesling 2006 fits the bill of drinking well now but having great potential to age. Steingarten has a great tradition under the Orlando label and now has been added to the premium range of wines under Jacob’s Creek. It shows the great versatility of this variety, particularly from South Australia, in making wines that have great flavour when they are young but develop complexity when they age. It’s also interesting at times to compare the same variety from different regions. There are two Chardonnays from cool climate regions in different states. They’re vastly different wines and I think they show why Chardonnay became such a dominant variety, with so many regions making great wines that are very different. Ian Walsh,Trading Manager

Make ahead to allow the flavours to infuse and develop. For the fennel salad, shave the fennel bulbs with a mandolin or cut the fennel in half lengthways, place flat side down and slice across ways as thinly as possible. Toss with lemon juice, olive oil and sea salt. Add the dill then toss again. Sprinkle the sardines with the salt, sumac, fennel seeds and pepper. Place the olive oil in a fry pan over medium high heat. Add the sardines skin side down and fry for 2-3 minutes. Turn over and cook for another 2-3 minutes. To serve, place the fennel on a plate and arrange 4 sardines on top. Sprinkle with olivatta. Serves 6.

Rochford can be found at the foot of the breathtaking Great Dividing Ranges with vineyards in the Yarra Valley and Macedon Ranges. Nashwauk Shiraz 2006
A new label from Kaesler wines, the Nashwauk range is already winning awards and has become renowned throughout the industry. Nashwauk is Kaesler’s first foray out of the Barossa Valley but still follows Kaesler’s criteria, by using estate grown fruit from McLaren Vale to produce wines of the region.
