Message froM the general Manager
Dear Harbor Beach Members, The time is almost upon us for our resort – our favorite summer “playground” – to begin the segment of our transformation that will affect you the most. It seems we have been talking about it forever. Yes, you’ve seen plenty in the past many months – all new rooms and suites, remodeled terraces, expanded Fitness Center and Spa enhancements, the exciting beginnings of the new Ocean Ballroom. We hope you are delighted with the changes. Come May , we embark on the project that in the coming months will alter your Club experience the most – at least for awhile. We will be saying goodbye to Cascades and Cascades Bar, and it’s not a small endeavor. To accomplish it, we will have to temporarily put out of service the cabanas, the tennis courts, the outdoor whirlpools, game room, locker rooms, and outdoor Club parking, In their place we will be creating a brand new SEA.level restaurant whose décor, ambience, food offerings and location-location-location will be the envy of every restaurateur along this coast. Probably no other project has occupied our thoughts as much as this one, and for one reason – we know it will affect the way you enjoy our resort day to day in the coming months. Therefore, we want you to know that we have plans in place to mitigate any inconveniences, for example: special discount on grilled foods (yes, we will have a temporary outdoor restaurant with pool and beach service); cabana passes will be convertible for other resort services, including room nights; special members-only happy hours; special offers on guest passes; festive “Golden Shovel” party to celebrate our new beginning. Among you, our valued Club members, are those who were with us through the last “Big One,” when we took out three restaurants, the entrance, and the entire Lobby. As you look back, I’m sure now you find it hard to imagine a Harbor Beach without 3030 Ocean, Starbucks, Tranquility, or The Spa and all it has to offer. We know that’s how you’ll feel in just a few months, when you’ll be enjoying a grand, new Harbor Beach. Here for you throughout this process will be all the fine features you’ve always enjoyed at The Club – The Spa, the beautiful pool, the private beach, the Beach Bar, fine food and special Club events . . . and most of all, the professional and caring service of our attentive and appreciative staff. As always, we’ll see you on the beach!

Pastry Chef Michel Chiche has dedicated 25 years of his life creating pastries, ice creams and candies for such hotels as The Beverly Hills, California; La Samanna Hotel, French West Indies; and the landmark hotel The Biltmore, Coral Gables. Chef Michel studied at the prestigious and world renowned Lenotre School, mastering many phases of the culinary arts. Procedure
Cut strawberries in four quarters. Place strawberries in bowl; add sugar. Fill sauce pan with water and place it over heat. Place the bowl of strawberries on top of the sauce pan and let it cook over that double boiler for 45 minutes. Over the heat, the strawberries will infuse and release the natural juices. Strain it without pressing the fruit, and chill. This preparation can be made one day ahead.

Final Presentation
In each martini glass place a half-pint of raspberries, fill to ¾ full with the strawberry infusion. Top with mango sorbet, one cookie and a sprig of mint. Bon appétit!

unique treasures: cloisters of the Monastery of st. bernarD De clairVaux
Did you know that the oldest European structure in the Western Hemisphere is less than 30 minutes away from our resort? It wasn’t built here, but it was brought to the US, and ultimately Miami, from Spain by newspaper magnate William Randolph Hearst in the 1920s. Mr. Hearst first saw the 12th- century monastery in its native Segovia. He bought it for $500,000, disassembled it stone by stone, crated it and shipped it home. About the time it was shipped to the States there was an outbreak of hoof and mouth disease in Spain, which caused customs officials to quarantine the straw-packed stones. When the customs agents burned the straw, they neglected to put the stones back in the numbered order so the entire shipment remained crated for the next 30 years. It took 19 months to finally assemble the architectural jigsaw puzzle. When it was finished in 1954 there were a few stones left over and some objects added that came from Hearst’s private collection that were not original to the structure. In 1964 the Episcopal Church purchased the Cloisters and today it is a functioning house of worship as well as a museum with a beautiful garden of many native Florida plants.
