pening Lawry's in Chicago presented me with a challenge. Until 1974, the year we launched in Chicago, there had been only one Lawry's The Prime Rib—the original, in Beverly Hills—and my father and I had long debated the merits of opening others. My dad adamantly disapproved of having more than one, feeling that additional Lawry's The Prime Ribs would diminish the uniqueness of the concept. I disagreed, convinced it was a concept that should be duplicated. I promised my dad I would abide by his wishes as long as he lived, and he very grudgingly accepted the compromise. Several years after my father's passing in 1970, we began the work that would result in the second Lawry's The Prime Rib and our company's first restaurant outside of California. The challenge was to bring the essence of Lawry's—our culture and ethics, our philosophy and way of doing business—to a new restaurant and location far away from where it first had been nurtured. Our philosophy is what we are. It's what makes us different—and better. A great deal of it has to do with giving our guests superior value. In today's economy, where just about every business that hopes to hang onto its customers talks about the value it offers, the emphasis always seems to be on price. But more than 70 years ago, when my father was contemplating opening the first Lawry's The Prime Rib, he was convinced that genuine value goes far beyond price. He believed that value is the experience you give your guests, in addition to fair and reasonable prices. Here at Lawry's, that experience includes delicious food of the highest quality, a touch of novelty and entertainment (our rolling silver carts and grand style of service) and, very importantly, an atmosphere of honest, friendly welcome, a haven where you can leave your cares at the door and restore (the root of the word "restaurant") yourself in the happy company of family and friends. I believed that Chicago, with its cosmopolitan population that understands and loves fine dining and fine beef, would be a great home for our new restaurant. I thought we'd hit the bull's eye with the location we found—a fabled McCormick mansion with a rich history dating back to the 1890s, just a short block off Michigan Avenue in the middle of the Magnificent Mile. I believed our menu, uniquely centered on top-quality roasted prime ribs of beef, would be a hit. But could we bring Lawry's value to guests in Chicago? Could we imbue a new crop of co-workers with what they needed to make that value not just talk, but reality? Like our Beverly Hills co-workers, those in Chicago would need to be excited about always striving to do a good job even better and take personal pride in making each guest feel special and delighted when they dined with us. Everything was riding on our ability to do so. If you know our Chicago restaurant, you know we succeeded. From that success has sprung a whole "family" of Lawry's The Prime Rib restaurants across the western United States and around the world. This year we're celebrating Lawry's 35th anniversary in Chicago. If you've dined at Lawry's elsewhere but haven't been to our restaurant in the Windy City, this is a great year to visit and judge our success for yourself. often stay in touch through the years. We were delighted to see John Cater when he visited us at Lawry's The Prime Rib, Beverly Hills. John was a busboy at the restaurant in 1964, and went on to become a captain (now retired) with British Airways. John and dining room server Jennifer Fetherston had a great time catching up, and "Fethers" later told us he was one of the best busboys she'd ever worked with. By the way, Ms. Fetherston herself recently retired after 45 years with our Beverly Hills restaurant (please see story on page 6). We miss her, and hope, like John, she stays in touch.

We recently bid "happy retirement" to four Lawry's The Prime Rib, Beverly Hills, co-workers with a special dinner and hugs all around. Frank. Altogether, the retirees represent more than 120 years of service to our company. Our deepest thanks to them for their dedication, friendship and outstanding efforts. We'll miss Sal, "Fethers," Julio and Hayden, and know they'll miss our guests! Two major wishes recently came true for 9-year-old Masa Oki. He underwent a successful, lifesaving heart transplant and celebrated his renewed health, along with parents Michiteru and Takako, as our guest for dinner at Lawry's The Prime Rib, Beverly Hills. Masa and his mom traveled from their home near Tokyo to Mattel Children's Hospital at UCLA a year ago to await a donor heart. Over the many months of Masa's hospitalization, Irene Johnson, UCLA pediatric chaplain, developed a great fondness for Masa. When she learned that Lawry's The Prime Rib in Tokyo was Masa's favorite restaurant, she introduced the boy to her husband, Lawry's in Beverly Hills general manager Todd Johnson, who promised Masa a special treat to celebrate his recovery. We welcomed Masa and his family to our Beverly Hills restaurant last month, and after he relished every bite of his prime rib dinner, treated him to a pint-sized Lawry's chef's hat and a behind-the-scenes tour of our kitchen. Masa is pictured with carvers Patrick Heck, Kevin Talley and Michael Guzman.
