INGREDIENTS

METHOD Combine tomato, onion, coriander and red wine vinegar. Season to taste and set aside. Combine olive oil and garlic. Brush over both sides of the mushrooms. Cook on a barbecue or char grill over medium-high heat for 3 minutes each side. Assemble burgers with hummus, lettuce, mushrooms, tomato salsa, beetroot, pineapple and a grainy bread roll. Serve immediately.
