									What is Yogurt? Yogurt is a cultured milk product, made by adding "good" bacteria to milk. These "friendly" cultures, L. bulgaricus and S. thermophilus, are what give yogurt its special properties. Similar to the making of beer or cheese, special organisms ferment and transform the milk sugar (lactose) into lactic acid, creating the distinctive properties of yogurt. This process has been around for at least 4,000 years. How Yogurt Benefits The Body Many people eat yogurt for its health benefits, because yogurt is more than a delicious, nutritious food. The cultures in yogurt are considered beneficial to be present in the intestinal tract of the human body to insure proper balance needed for digestion and good health. Yogurt with live, active cultures can: • Help to overcome lactose intolerance • Aid digestion of milk protein • Helps prevent and combat digestive tract infections In recent research, other exciting effects have been observed and are currently being studied. Yogurt is one of the most important aspects of Swirlz. Frozen yogurt is why our customers step into our store; so taking proper care of it will ensure our customers return. Deliveries:
 Deliveries are twice a week  Yogurt comes frozen  All yogurt boxes must be dated before put away  Yogurt must be taken out of the freezer and rotated into the refrigerator daily  Always take the oldest dated box first  When putting frozen product in the refrigerator, move the oldest to the front and the newest to the back  Always use the oldest product first  At least 3 gallons of each flavor must be removed from their boxes at all times  Everything must be dated  Always shut the door completely and turn the light off when you leave


Refrigerator Rules:

Thawing Product:

 Product must be completely thawed (no ice crystals) before pouring into the machines  At least 3 gallons of every flavor, in the refrigerator, must be removed from boxes at all times  If necessary, it is ok to speed the thawing process by placing yogurt in a cool water bath in the prep-sink  Closers should remove frozen popular flavors from the refrigerator to the prep-station to thaw overnight  In emergency situations it is okay to pour yogurt into a container and stir with a whisk to thaw faster

Adding Yogurt to the Machines:
 

Yogurt cartons must be shaken before pouring into machines If unsure if carton contains ice crystals pour slowly to check, if there are stop pouring immediately  If machine was extremely low, remove the air tube, then pour in thawed yogurt, and reinsert air tube hole side down  Several flavors need mixing o Blueberry Tart  Mix 14oz. Blueberry Syrup with 1gal. YoCream Euro Tart yogurt  Blend with a whisk  Add to machine o Mango Tart  Mix 14oz. Mango Syrup with 1gal. YoCream Euro Tart  Blend with a whisk  Add to machine o Acaí Tart  Mix 8 thawed packets of Sambazon Acaí with 1gal. YoCream Euro Tart  Blend with a whisk  Add to machine o Cake Batter  Mix 1 box Yellow Cake Mix with 1gal. Vanilla yogurt  Blend with a whisk  Once combined add 2 more gallons of Vanilla yogurt  Blend with a whisk  Add to machine
