Hawke’s Bay 2012
We named this range after the Hawke’s Bay hills. I've always thought they
look like crumpled blankets on a giant unmade bed, especially late in the
afternoon when the sun is low. Blanket Hills is my idea of what Hawke’s Bay is
capable of when you're chasing a bigger, more voluptuous style. They're
unashamedly comfortable, generous wines - perfect now but definitely worthy
of some cellar time.
Slow Burn is a generous expression of the classic Hawke’s Bay Chardonnay
style. Ripe stonefruits. Creamy mouthfeel. Toasty Oak.
WINEMAKER – ROD MCDONALD
Grown in two vineyards, situated from coastal to inland Hawke’s Bay and
planted with a combination of Clone15 and Mendoza Chardonnay. Vines
were cropped at between 5 and 8 tonne per hectare to ensure ripeness,
balance and concentration.
2012 was a standout year for Hawke’s Bay Chardonnay. These grapes were
harvested at optimum ripeness between 22.5 and 23.5 Brix with a balanced
A portion of the juice was cool settled for 18 hours before being racked to a
fermentation tank where it was fermented at around 14 degrees. Cool
enough to retain fruit intensity, yet warm enough to encourage palate
texture and a rounded mouthfeel.
The remaining portion was run immediately to barrel where it was warm
fermented to develop richness and flavour complexity. Following ferment,
the wine was stirred on yeast lees for winter before completing a full
malolactic ferment in Spring.
