After 5 years, returned to ISS to re-establish the national food services division
Conceived the marketing, sales, HR/IR, labour and operational SOP’s & strategic plans for the national food
Developed ISS Facilities Services, a multi service company which incorporated food service as the foundation
service then introduced other ISS services to compliment the service offer, i.e. Cleaning, Security etc.
Undertook the role of General Manager ISS Facility Services Health Care then focused on growing the division
as Director of Business Development. During this period I won, transitioned and operated contracts in excess
of $90M PA before transitioning exclusively to growing the division. I ended my time at ISS by securing the
RNSH PPP contract with a total contract value of $710M over 25 years.
2000 – 2005 (5 years) National
Working directly for the owners (two accountants) of this emerging catering company to develop markets, win
profitable business, and drive corporate structure & culture through the company.
My highlight with Artistic was to bid, win and then profitably oversee the delivery of services to 17
Commonwealth Games facilities. My 17 facilities were more facilities than all other catering companies

1995 – 2000 (5 years) National
This was a start-up position for catering within Tempo. At the time, Tempo had more than $700M of contracts
in Cleaning & Security and desired to diversify their contract offering.
I was brought into the company by a Tempo board member who had been my past MD at DNC. My role was to
evaluate the markets where Tempo traded and locate a soft entry for food services. The health sector was the
soft target and we grew a $70M food service business within 3 years.
On the sale of Tempo Plc to ISS (private equity) the food service division was sold to the Compass Group.
Serendipity Catering International & Total Food Management
1992 – 1995 (3 years)
SCI – Five Star wholesale food manufacturing company. Products were designed for the top end of town (High
Street) QSR’s or Gourmet retail pantries. I sold this business after securing the prestigious David Jones food
court supply contract.
TFM - Partner in a family owned retail food service Company which owned multiple branded Pizza Restaurants
and a gourmet deli.

1985 – 1992 (7 years) National then assigned to International, USA/NZ
• General Manager of 4 States in Australia (predominantly QSR catering businesses & retail) – Branded
concepts, B&I, Retail, Airport concessions, Rail and Sports & leisure.
• Seconded to North America – Sports Service (a DNC Int Company). Sports service is the largest sports
Concession Company in the world. Concession Air (a DNC Int Company). Concession Air is the largest
airport concession company in the world.
• Seconded to New Zealand – Tempo/DNC Health Services. Joint venture Company between DNC Int
and Jardine Int.
I was the 4 employee in Australia for Delaware North Corporation International. DNC Australia was started
on the back of a privatisation of the Federal Government’s Commonwealth Catering and Accommodation
Services Company (CACS). The Australian business was split in half and I had total responsibility for all
businesses in Victoria, Tasmania, South Australia and Western Australia.
The initial businesses included:

Taralba was then purchased and businesses included:

AVS catering was purchased from Foster’s Brewing Group and businesses included
Predominantly Victoria and East Coast, 15 sports venues, all food and beverage. These sites included
all of the major sports venues in Melbourne, including the tennis centre with the exception of the
Tempo/DNC Health support NZ was purchased by the JV between DNC Int and Jardine Investments Int. This
was a privatisation of all support services, including all catering, for Crown Health Enterprises (CHE), in NZ.
Whilst at College I won the national “Luke Trophy” for waiter of the year.
Prior to graduation, I was team captain “Victoria” for the Victorian “Cater-mind” team. My team of 3
successfully won this national catering academic competition which was broadcast on the ABC.
