Carrot Cake with Cream Cheese Topping
Ingredients 200g grated Carrots 50g chopped Walnut pieces 75g Sultanas 200g Self Raising Flour 2tsp Baking Powder 1tsp Mixed Spice 2tsp cinnamon 125g Dark Brown sugar 140mls Sunflower oil 2 Eggs Topping 250g Low Fat Cream Cheese 125g Icing Sugar 1tblsp Orange Juice Method 1. Heat oven to 175ºc (350º).Grease and line 8” tin 2. Mix together grated carrots and chopped nuts together with the flour and spices. Add sultanas and sugar 3. Make a well in the centre 4. Whisk together eggs and oil. Pour into the well and beat together 5. Turn into the tin and bake for 1 hour 15-20 mins 6. Allow cake to cool. Whisk together cream cheese, orange juice and icing sugar until smooth and creamy 7. Spread over the top of the cake 8. EAT!
