How to Make Fruits and Veggies Fun for Kids
Cucumber Shooting Stars
Ingredients:
½ small cucumber 3-6oz of cheddar cheese
Preparation:
Slice cucumber ½ inch thick disks. Using a small star shaped cookie cutter, cut star shapes from the sliced cucumber disks. (Or just use a sharp knife to cut stars) Cut cheddar cheese into small cubes or rectangles. Place cucumber stars on a large plate. Use cheese pieces to make up the tail of a “shooting star”.

Dippers
Ingredients:
2c plain non- fat yogurt or non-fat sour cream 1 pkg (10oz) frozen chopped spinach, thawed and drained 1/3 c finely minced green onion 1 envelope (0.9oz) vegetable soup mix Assorted raw vegetables cut up for dipping If your child is under 3-4 years old, avoid hard vegetable pieces ( may cause choking). Grate vegetables to make “strings”, or cut into very small pieces.
Preparation
In a medium bowl, combine first 4 ingredients to make dip Cover and refrigerate until ready to serve with veggies

Cucumber and Carrot Towers
Ingredients 2 whole carrots 1 cucumber Preparation Slice pieces of carrot and cucumber into long sticks (about 3 inches long) (rectangular pieces are best for stacking) Place on plate and allow children build a “tower” and then eat it from top to bottom Serve with a glass of milk, piece of cheese or whole grain cracker
