                    “What’s So Great About Breakfast?”

1. Homemade Granola- Berry Parfait


3 cups regular rolled oats
1/2 cup unsalted pumpkin seeds (or chopped nuts)
2 tbsp brown sugar
1 tbsp cinnamon
1/2 tsp lemon zest (optional)
1/2 tsp orange zest (optional)
6 tbsp unsweetened apple juice concentrate
3 tbsp hot water
1/2 cup dried fruit (raisin, apricots, or cranberries)

   1. Preheat oven to 300 degrees
   2. In a large bowl, combine oats, pumpkin seeds, lemon and orange zest,
       and cinnamon.
   3. Add apple juice and water. Mix well.
   4. Spread mix on greased cookie sheet and bake for 30 minutes until golden.
       Stir every 10 minutes to bake evenly.
   5. Remove from oven and cool. Stir in dried fruit.

Breakfast Parfait

   1. In small bowl or cup slice 1/2 banana.
   2. Top with 1/2 cup low fat vanilla yogurt. Sprinkle granola on top.

Please note: This can be make in a paper cup and served with a plastic spoon for
"Breakfast on the Go".

2. Creamy Apple-Cinnamon Oatmeal (Makes two servings)

2   C skim milk
1   C rolled oats
1   Tbsp brown sugar
1   Tbsp maple syrup
1   apple, peeled cored and chopped into cubes


     1. Pour milk into medium pot, and heat over medium heat until almost
     2. Add oatmeal, reduce heat to low and cook for 5 minutes, or until the milk
        is soaked up by the oatmeal
     3. Add brown sugar, maple syrup, and apple pieces
     4. Stir well, and serve!

3. Egg Scramblers (Makes one serving)

1 or 2 eggs
1 toasted whole wheat pita or toasted English muffin or whole wheat tortilla
Optional items: Chopped peppers or tomatoes, onions, mushrooms, salsa, low
fat cheese, or any other item you like in your eggs!


     1. Crack Eggs into a microwave safe bowl and beat well. Mix in other
        desired ingredients
     2. Cover tightly with microwave safe plastic wrap
     3. Microwave 1 minute for one egg, 1 and a half minutes for two eggs.
     4. Spoon into pita or on English muffin, or warm tortilla
