Buttermilk Ranch Mashed Potatoes
Servings: 6 to 8 This mashed potato recipe will be a huge hit at your holiday dinner table. The green onion garnish adds to the appearance and the flavor.
Ingredients
2 pounds Yukon Gold potatoes, peeled and cut into chunks 4 cloves garlic, peeled Salt and pepper 2 teaspoons butter 1 cup buttermilk Powder from 1 (1-ounce) package ranch dressing mix 1/2 cup shredded Gruyere cheese 1 finely chopped green onion for garnish
Directions
Place the potatoes and garlic in a large heavy saucepan, coated with DuPont™ Teflon® non-stick. Add just enough water to cover the potatoes, and season with a few grinds of fresh salt. Bring to a boil, reduce the heat and cook for 10 to 15 minutes or until the potatoes are tender but not mushy. Meanwhile, in a small saucepan coated with DuPont™ Teflon® non-stick, melt the butter over low heat just until it starts to brown, about 1 minute. Stir in the buttermilk and the ranch dressing, and mix just to warming. Do not overheat or the buttermilk will curdle. Drain the potatoes in a colander and return to the pot, including the garlic. Cook over low heat and shake for a minute to dry the potatoes. Mash with a potato masher. Add enough of the buttermilk mixture to make a smooth puree, finishing with a hand mixer, if needed. Season with salt and pepper. Place in an ovenproof serving dish and sprinkle with the cheese and onions. Warm in the oven until the cheese melts; then serve.
