Christmas or Wedding Cake
500 gms. Flour 454 gms. Margarine 454 gms. Light Brown Sugar 500 gms. Raisins 500 gms. Sultanas 200 gms. Cherries 200 gms Mixed Peel 150gms. Chopped Almonds 200 gms Ground Almonds 11 Eggs Rind of 1 lemon, Grated apple ½ tsp. Mixed Spice (if desired) ¼ tsp. Nutmeg 2 tbsp. Whiskey
Method
1. Cream margarine & Sugar together. When white and creamy add beaten egg little by little 2. When all the egg has been added add in sieved flour gently 3. In another bowl mix sultanas, raisins, mixed peel, floured cherries which have been cut in 2. and mixed spice ,grated apple and lemon rind. 4. Add all of the above to the creamed mixture , Mix well 5. Transfer to a greased and lined cake tin. 6. Bake in a preheated oven at 275°F, 140°C, Gas 1 for 4 – 5 hours 7. Check cake while cooking 8. Leave in the tin until cool.
