there. So it’s understandable that Hoy
knows how to grow grapes.
    “To make the best wine you need
fabulous grapes in the vineyard,” he
believes. “Then just be a steward to
those vines and support them.” And
Ayers agrees: “Paso Robles is on the
cusp of something special.” Hearth-
stone has its share of blended wines,
like Pearl (Viognier and Roussanne),
Pioneer Red (Syrah and Primitivo),
Lodestone (Mourvedre, Syrah and
Grenache) and Slipstone, a blend of
Grenache and Syrah and this seems to
be what the public wants. Ultimately,
Hearthstone excels due to their ability
to treat every wine individually unlike
some wineries which take a homoge-
nized approach where all the wines
are consistently made with the same
recipe. “That’s why Paso Robles is
skyrocketing,” Ayers suggests. “We are
making wines to the best of our
ability.” And Hearthstone’s long-term
plan embraces this philosophy. “We’re
not trying to be the biggest winery,”

A Glimpse of Modern Technology Meets the Art of Wine Tasting
   Recently voted Best Tasting Room in the Santa Ynez Valley, Avant
