1 cup couscous 1 15 oz can crushed tomatoes
1 cup boiling water/.5tsp salt 2 tsp basil
3 tablespoons olive oil 1 tsp oregano
3 clove garlic, minced Salt/pepper to taste
1/4 cup diced red bell pepper 1 dash balsamic vinegar
½ onion, diced 1/4 cup grated Parmesan cheese
1. Preheat oven to 350 degrees F (175 degrees C).
2. Boil water with salt. When it comes to a boil, add the couscous. Cover pot for 5-6 minutes.
When couscous is cooked, fluff it with a fork.
3. Heat oil in a large skillet over medium heat. Stir in garlic, onions and peppers; sauté briefly. Stir
in tomatoes and spices. Sauté on low heat. Splash some balsamic vinegar on top and add
parmesan cheese. Add to cooked couscous
Note: Parmesan cheese is salty, so keep that in mind when adding salt.
