Sweet Potato Pudding
This comfort food will become a favorite. Drizzle with warm maple syrup, if
you like.

4 medium sweet potatoes, peeled, cubed

1/4 cup packed light brown sugar

1. Spray bottom and side of slow cooker with
cooking spray and add sweet potatoes; cover and
cook on high until potatoes are tender, about 3 hours. Remove potatoes
and mash with remaining ingredients, except eggs and marshmallows;
mix in eggs. Return potatoes to slow cooker; cover and cook on high 30
minutes, sprinkling with marshmallows during last 5 minutes.

Variation
Sweet Autumn Pudding—Make recipe as above, using 11/2 cups each peeled
cubed sweet potatoes, hubbard squash, and sliced carrots; substitute 1/2 tea-
spoon ground mace for the cinnamon and cloves and omit marshmallows.
