Apple-Cranberry Relish (recipe follows)
1. Mix all ingredients, except salt, pepper, egg, and Apple-Cranberry Relish;
season to taste with salt and pepper. Mix in egg. Pack mixture in greased
51/2 x 3-inch loaf pan and cover securely with aluminum foil; place on rack
in 6-quart slow cooker. Add 2 inches hot water; cover and cook at high
until sweet potatoes are tender, about 3 hours. Remove from slow cooker
and let stand on wire rack 5 minutes; invert onto serving plate. Slice loaf
and serve with Apple-Cranberry Relish.
Apple-Cranberry Relish
Makes about 1 cup
1/2 cup whole-berry cranberry sauce
1/4 cup each: chopped tart apple, orange segments
2 tablespoons chopped pecans or walnuts
2–4 tablespoons sugar
1 tablespoon grated orange or lemon zest
1. Combine all ingredients.
