It seems two well-known magazines, Coastal Living and Sunset, will be featuring articles on Avila Beach this spring. The Coastal Living feature is scheduled for the April 08 issue, and Sunset Magazine will feature Avila Beach in May or June. Check them out if you get a chance—you just might see a sentence or two about yours truly. Woohoo! Finally, be sure to check out our Upcoming Alapay Events section on the inside of this newsletter. It’s full of great Alapay activities and events! Thank you all for being a part of the Alapay Cellars family. Have some fun with us this spring/summer and God Bless You! Springtime at Alapay! The anticipation of warm days at the coast, many upcoming wine releases, a calendar full of events including our sunset summertime cruise series, and a new South American cruise-- gives us with plenty to talk about. So let’s get started! As p r i m a r y a n d s e c o n d a r y f e r m e n t a t i o n are just finishing up on those great 07 Alapay reds (they will now be left in the barrel for an additional 6-12 months), Scott has been busy bottling some of our upcoming summertime releases that include the 2006 Santa Barbara County Grenache, the 2006 Santa Barbara County Reserve Syrah, our 2005 Paso Robles Cabernet Sauvignon, and some white wines which include the new 2007 Santa Barbara County Viognier, as well as the new release 2007 Paso Robles Roussanne. The Grenache and Syrah were barrel aged in French oak for 17 months, the Cabernet Sauvignon for 24 months, and the two whites—Viognier and Roussanne-- for about 6 months. The Viognier and Roussanne are bottled much earlier in order to capture those great floral-aromatic noses that these two varietals are so famous for. Look for many of these wines to appear in the July wine club shipment as well as in the tasting room this summer/fall. www.AlapayCellars.com ORDER ONLINE TODAY! The 2006 Bien Nacido Vineyard Santa Maria Valley Pinot Noir (in your January wine club shipment) and the 2006 Late Harvest Moscato both received a Gold medal. While Silvers medals were given to the 2006 Santa Barbara County Viognier, the 2006 Reserve Bien Nacido Chardonnay, the 2006 Reserve Stolpman Vineyard Syrah, and the 2004 Paso Robles Zinfandel. We look forward to submitting more wines to other competitions in the near future. Scott, Rebecca and Tiffany Remmenga. JUST ThE fACTS: Primary and Secondary Fermentation Primary fermentation that takes place in both white and red wines, converts the natural sugars in wine grapes to alcohol. This process occurs with the help of yeast whose digestive by-product (luckily for us) is alcohol and Co2 gas. Secondary Fermentation or Malolactic fermentation occurs with some whites (such as Chardonnay) and nearly all red wines. The process converts tart malic acid to softertasting lactic acid. This process occurs by adding lactic acid bacteria to the wine, which consumes malic acid to produce energy. Club Members and Scott having a good time! Tiffany’s pre-school picture!
