					                     Cauliflower Bake

I worked with Trish at Charter Cable. She liked the Adkins type diets
and this recipe is a low carb but Tasty dish. It was served at a “Bring
a Dish” event at our office. It was so good you would never think it
was for a low carb diet, I had to have the recipe and doubled the
recipe so it wouldn’t run out so fast!

Two 16 oz packages frozen Cauliflower (or 2 Fresh heads)
16 oz of cream cheese softened to room temperature
16 oz of shredded cheddar cheese
4-8 green onions chopped finely with a little of stalk
1 teaspoon fresh ground pepper
¼ teaspoon cayenne pepper
1 teaspoon Salt (I use seasoning salt)
1 teaspoon Morton’s Nature Seasons seasoning
6 pieces bacon, chopped and fried till crisp
Paprika for shaking on top

If using fresh cauliflower, trim and cut and break off pieces. Cut the
stalk into smaller pieces so it will cook evenly with the floret’s.
Steam the cauliflower until fork tender to your liking. Let cool.

Meanwhile, mix the softened cream cheese, the cheddar cheese and
green onion together.

Spray a 9x13 dish or large casserole dish with vegetable spray.

Put in the Cauliflower. Sprinkle the Salt, Peppers and Morton’s over
the cauliflower evenly. Can add additional Kosher Salt if you wish.

Take the cheese and onion mixture and form patties much like you
would potato pancakes but about 1/3” thick and cover the top of the
Cauliflower. Sprinkle the top with Paprika

Bake at 350 degrees for 30-45 minutes until browned and bubbly.

Sprinkle the chopped bacon on top before serving.
