							Nurses’ Day cup cakes

Follow this simple recipe and add whatever you like to create your own Nurses’ Day
cup cakes.

Preparation time: 10 mins
Cooking time: 18 mins
Recipe makes: 12 cup cakes

Ingredients
      150g self-raising flour
      150g caster sugar
      150g softened butter
      3 medium eggs
      2tbsp milk
      Vanilla extract

Method
Line a bun tray with paper cases.
Set the oven to gas mark 5 or 190°C.
Put all of the ingredients in a large mixing bowl and beat until smooth.
Divide the mixture between the paper cases, and bake on the middle oven shelf for
around 18 mins, or until the cakes have risen and are just firm to the touch in the
centre.
When the cakes are cooked, take them out of the tray and put them on a wire rack to
cool.
