Ingredients;
   • 300g plain flour
   • 1/2 teaspoon salt
   • 1/4 teaspoon baking powder
   • 50g caster sugar
   • 75g softened unsalted butter
   • 75g Trex (shortening)
   • 1 egg yolk
   • ice cold water
   • mincemeat

Method;
  • Sift the flour, salt, baking powder and sugar into a bowl.
  • Add the chopped butter and Trex and rub with your fingers until it
    turns into fine crumbs.
  • Beat the egg yolk and add the ice cold water until it measures 75ml.
  • Add to the dry ingredients and mix with a butter knife until well
    combined.
  • Knead the dough very briefly until it is smooth.
  • Wrap the dough in cling film and leave in the fridge for at least 30
    mins.
  • Preheat the oven to 200c.
  • Grease a 12 hole pie tin (the holes are not as deep as a muffin tin,
    however you can use one of these, but you may need more pastry and
    you pies will be deeper)
  • Take the dough out of the fridge and on a lightly floured surface roll
    it out until it is thin (about 2-3mm).
  • Cut out circles with a cutter that are bigger than the hole, and press
    very gently into the tin.
  • Add a spoonful of mincemeat into each pie.
  • Brush the rim of the pastry with milk or beaten egg.
  • Add a lid and brush that with the milk or egg yolk, cut a small slit
    into each pie and sprinkle over some sugar.
  • Bake for 15-20 mins until they are golden brown on top.
  • Leave to cool.
