									Easy and Delicious Fudge by Kathy Gary
This is an easy fudge recipe and one of my favorites as the winter months approach. A
piece of this fudge and a cup of tea on a cold winter night is a perfect way to end the day!



                    Chocolate Peppermint Fudge
1 2/3 cups granulated sugar
2/3 cup (5 oz. can) evaporated milk
2 tablespoons butter
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups semi-sweet chocolate chips
1/2 teaspoon vanilla extract
1/4 teaspoon peppermint extract
1/4 cup crushed, hard peppermint candy

Line and 8-inch square pan with aluminium foil. Lightly butter the foil. Set aside.

In a heavy 3-quart saucepan, over medium heat, mix sugar, evaporated milk, butter and
salt. Bring to a rolling boil, stirring constantly. Continue to stir constantly for 4 minutes.
Remove from heat.

Carefully stir in the marshmallows, chocolate chips, vanilla extract and peppermint

With a wooden spoon, stir vigorously until the marshmallows are completely melted.

Pour into prepared 8-inch square pan. Allow to cool slightly. Sprinkle the peppermint
candy on top of the fudge.

Refrigerate for 2 hours or until firm.

Lift from pan and remove foil. Cut into 1 to 2 inch pieces. Enjoy!
