Soupe á l’oignon: French onion soup topped with melted gruyere & toasted crouton

Soupe de poisson: a traditional southern French recipe, a seafood velouté with a
touch of cayenne topped with a crouton and “la rouille.”                              $ 7.50

Reblochon salade: Baby beets, Lentilles Vertes du Puy A.O.C., chopped bacon,
Reblochon cheese with vanilla dressing.                                               $ 9.75

Salade Bamboo: organic mesclun topped with diced tomatoes and a white truffle
Champagne vinaigrette. (If you prefer our classic Balsamic vinaigrette, let your server
know.) Add walnuts upon request.                                                       $ 6.75

Warm sautéed Bell & Evans all natural chicken liver served over organic
mesclun with caramelized onions and mushrooms with a Balsamic vinaigrette.            $ 8.50

Cassoulet au confit de canard: Bamboo’s version of this Southwestern French
speciality with white beans, duck confit and Toulouse sausages slowly simmered in
duck fat.                                                                                           $26.95

Boeuf á la Bourguignonne: like most Burgundian dishes, this one is slow-cooked
in wine. Our cubed beef is stewed in red wine with carrots, sage, and rosemary.
Served with a side of vegetables.                                                                   $23.95

Choucroute Garnie Alsacienne: Alsatian-style sauerkraut cooked with old-
fashioned slab bacon, a variety of sausages and an 8 oz. pork chop slow simmered with                    3

Canard Rôti: half a duck seasoned with sage, slowly roasted and served with
an orange sauce. Kindly request if you prefer extra crispy.                            $27.95

Filet Mignon au poivre: tender fillet of beef accompanied with a Cognac green
peppercorn cream sauce. (Or, if you prefer, request accompanied by our creamy
