AGRICULTURAL PRODUCTS
Agricultural products is designed to provide exploratory instruction into the food science and technology
industry of the United States. The course will provide a general introduction into food science. The major
emphasis will be in the meat processing area, which will include the identification, grading, and
processing of meat products and the development of skills in retail meat cutting, wrapping and storage,
curing meats and sausages, and meat pricing. Beef, pork, lamb, and deer will be processed as available.
Boxed beef and pork wholesale cuts will also be processed. The course will also explore the dairy
products and crop processing industry.

An Ag. Products FFA Mini-Chapter will be organized that will meet at least once during the semester and
as needed. Various FFA activities will be conducted during the semester. Class time throughout the
semester will be used to work on the development of SAE programs and the updating of the SAEP
recordbook.
