					                                 Baked Acorn Squash
This is one of the entrées recommended in the Quickie Recipe section of the Appendix in
Devoted Bodies. But you may not know how to prepare an acorn squash so here goes.
Preheat oven to 400 degrees. Cut the squash in half (see methods below). Sprinkle
squash halves with garlic or onion powder and place halves cut-sides down in baking
dish. Add ½ cup water to bottom of pan. Bake 30 minutes or until soft (insert knife to
determine). This squash tastes wonderful topped with marinara

STEP BY STEP: Two Ways to Cut Squash Safely--Knife and Rubber Mallet




1. Set squash on damp kitchen towel
to hold it in place. Position knife on
rind of squash.                            2. Strike back of knife with rubber mallet to
                                           drive knife into squash. Continue to hit
                                           knife with mallet until knife cuts through
                                           squash.

Hammer
