Belgium Biscuits Ingredients: ½ C sugar 100gms. butter 1 ¼ C flour 1 egg 1 ½ t baking powder 2 t cocoa 2 t cinnamon 1 t allspice Method: Cream butter and sugar together. Add egg and beat well with wooden spoon. Add all dry ingredients and mix well. Roll out gently on board to 1cm. thickness and cut into rounds. Bake at 180 C for 12 – 15 minutes. When cooked place on wire rack to cool. Spread on biscuit with raspberry jam and join 2 together. Ice with pink icing to finish. Icing: Mix 1 t of melted butter, 2-3 T boiling water, 1C icing sugar and 2 drops of red food colouring together. You may need to adjust icing sugar or water to reach a semi runny consistency.
