                         PERMANENT FARM SHOP BUTCHER
                             (Skills Framework Level 1)

Located within the Stable Courtyard, the Farm Shop offers an exciting,
high quality food retail experience. It has a focus on good quality produce,
sourced largely from the Estate and Yorkshire and showcases some of the
best food the region has to offer. Our aim is to source first class products
from small suppliers, who use local ingredients and traditional methods of
production and encourage the local community, as well as the 200,000
visitors a year to Castle Howard, to enjoy them.

One of the main focal points is the traditional butcher's counter where
Castle Howard Estate and local meat and game are sold. The successful
applicant will support our extremely successful and well-established
butchery department.

Job Title:                 Farm Shop Butcher

Job Requirements:
                           Previous butchery experience preferred but not essential
                           Flexible approach to duties undertaken
                           Ability to work within a team or on own initiative as
                           required
                           Excellent communication skills
                           Honesty and a high level of integrity
                           Enthusiasm and capacity for hard work
                           Systematic and cheerful approach with a ‘can do’
                           attitude

Hourly Rate:               Dependent upon experience plus Group Personal
                           Pension Scheme (including death in service benefit)

Hours of work:             40 hrs per week, 5 days out of 7 determined by rota

Annual Leave
Entitlement:               30 days calculated on a pro rata basis

Reports to:                Head Butcher, Assistant Butchery Manager, Farm Shop
                           Manager

Liaising with:             Colleagues within the department

Main Objective:

1. To achieve financial parameters as set down in the budget

2. To comply with all aspects of Food and Safety hygiene

3. To increase basket spend in the Farm Shop through effective and regular
   staff training

4. To maintain a high quality, consistent and distinctive product which is
   consistent with the Castle Howard brand

5. To assist with the improvement of customer service across the entire
   Estate

Key Tasks:

1. To cut, bone and trim meat

2. To serve customers over the counter and to advise customers on how to
   prepare and cook the meat

3. To buy, order and control the stock

4. To receive deliveries and check their content and hygiene

5. To move stock to cold storage areas as necessary

6. To prepare product displays

7. To maintain a clean and hygienic sales counter and storage area at all
   times

8. To assist in the efficient running of the Farm Shop

9. To help to motivate and lead the Farm Shop team to deliver the
   departmental business plan

10. To promote and safeguard the Castle Howard brand at all times

11. To comply with all aspects of Food Hygiene and Health and Safety at all
    times

12. To be responsible for the organisation and control of stock and stock-
    taking

13. To respond to customer queries in a timely and efficient manner

14. To contribute to the departmental business plan and assist with
    achieving the objectives and goals set

15. To conduct and implement risk assessments and to operate in accordance
    with Castle Howard’s Health and Safety policy at all times

16. To undertake any other duties as may reasonably be required by the
    Head of Retail or the Resident Agent.

The Castle Howard Skills Framework is used for a number of personnel management
