									                           Spinach and Ricotta Bruschetta

Ingredients                              Equipment
    2 breadsticks                           Bread knife
    3-4 garlic cloves                       Bowl
    200 gms English spinach                 Chopping board
    10 leaves parsley                       Oven tray
    150 gms ricotta                         Small knife
    Olive oil                               Wooden spoon
    100 gms parmesan                        Peeler
    Salt and pepper

What to do

1. Preheat oven to 150 degrees.
2. Slice the bread into slices about 1cm thick (make sure you have at least a
   piece for everyone). Heat the griddle plate over a medium heat.
3. Brush the bread lightly with olive oil and grill on the griddle plate until
   nice and toasted, turn over and repeat on the other side.
4. Peel the garlic and rub the garlic into the cooked bread. The bread can
   rest in a warm oven until ready to serve.
5. Set up the chopping board and finely chop the garlic.
6. Sautee the garlic, parsley and spinach in olive oil until spinach has wilted.
7. Place ricotta, spinach and garlic mix, parmesan cheese and salt and
   pepper into the food processor and blend until smooth.
8. When ready to serve, spread a small amount of spinach mix over the
   toast. Enjoy!!!
