					Savory ice cream with tomato and basil

Most people only know what sweet ice cream tastes like. Here, ice cream tastes wonderful as a
savoury starter. This dish can serve as a unique entrée, or a fragrant garnish for a cold vegetable
soup such as gazpacho.
This recipe combines the tastes of rich cream, zingy tomato and basil in an unusual form. The
cold temperature keeps all three tastes crisp and fresh. It’s almost too easy to make.
Serves 4-6 as a starter.

What you’ll need
An ice cream maker
1 cup (250 mL) of freshly chopped basil
1 1/4 cups (300mL) cold tomato juice
1 1/4 cups (300mL) cold liquid cream
1 tsp (5 mL) of salt (or to taste)
Freshly ground black pepper
2 tbsp (15 mL) sugar syrup, maple syrup or honey (or less, to taste)
Optional: 1/2 clove fresh mashed garlic


What you’ll do
Combine all ingredients in a bowl and stir until smooth. Taste seasoning, and adjust with more
pepper or salt as desired. Process the mixture in an ice machine according to instructions.
Serve as a starter or with cold soups, salads, meats, and a dry red wine (like Rioja).
Strawberry sorbet ice cream with basil

This is a classic fresh summer sorbet with a basil twist. If you like your sorbets even zingier, you
could use less sugar and more basil to taste. This is a dead easy recipe with which to experiment;
try other flavours of fruit such as blackcurrant, mixed berries, plums, or even mulberry.
Serves 4.

What you’ll need
An ice cream maker
A food processor or blender
About 3-4 cups (750 – 1000 mL) strawberries
Sugar syrup, to taste:
        3/4 to 1 cup of granulated sugar, dissolved in a little more than 1/2 cup (150 mL) warm
         water and cooled, or
        3/4 to 1 1/4 cups (175-300 mL) maple syrup or
        3/4 to 1 cup (175-250 mL) runny honey
1 cup (250 mL) very finely chopped fresh basil
A few drops of fresh lemon juice (optional)


What you’ll do
Wash and clean the strawberries. Purée them in the food processor or blender. Combine the cool
syrup, blended strawberries and chopped basil. Taste and adjust sweetness as desired.
Process this sorbet ice cream mixture in an ice machine according to sorbet ice cream
instructions.
Try not to eat it all at once.
