Lime Fresh Mexican Grill breaks into new market,
partners with national charity for grand opening event
Coconut Creek, Fla. – Ever since Lime Fresh Mexican Grill Restaurateur John Kunkel
was young, he has shared a passion for cooking and martial arts. Now he has found a way
to combine the two.
Lime Fresh Mexican Grill’s new location in Coconut Creek will be partnering with the
Sidekick Foundation for its grand opening event on Dec. 4. The Coconut Creek Lime,
located in the Promenade at Coconut Creek, 4425 Lyons Road, will be Franchisees Dr.
Robert Hirsch’s and Andrew Hirsch’s second location.
The Sidekick Foundation’s President Arthur Pryor created the foundation to help provide
martial arts scholarships to at-risk youths, people with disabilities and the elderly. The
Sidekick Foundation is a national nonprofit charity with more than 100 chapters
throughout the U.S. For Lime’s grand opening event, the Sidekick Foundation will raise
funds for the children at USK Karate Academy, a local martial arts academy.
Throughout the past 35 years, more than 50 psychological and medical studies show that
martial arts training can improve mental, physical and spiritual health. This training not
only helps keep “at-risk” youths on the right path through positive reinforcement and
discipline, but there is also much anecdotal evidence that martial arts training can
tremendously improve the physical capabilities of the disabled. Additionally, a study
done at Emory University Medical Center showed that a modified Tai Chi Chuan
program (slow, Chinese, martial arts-based exercise) can reduce the risk of a serious fall
in the elderly by almost 50 percent.

The grand opening event will consist of fundraising events for Sidekick, including a “big
check” donation from the franchisees for one percent of sales from the entire month of
December, as well as a raffle and general donations from guests. There will also be a
traditional ribbon cutting and proclamation ceremony by Coconut Creek Mayor Becky
Tooley, a mariachi band for entertainment and delicious fresh-Mexican cuisine for
everyone to enjoy.
The new location in Coconut Creek will be Lime’s fourth location. Lime Fresh Mexican
Grill's CEO and Founder John Kunkel is excited to watch his concept grow and has no
plans of slowing down.
“It has been my vision from the beginning to watch Lime grow in the south Florida
market before expanding elsewhere,” Kunkel said. “It’s great to be able to see it happen
while providing Coconut Creek guests with great food and service at the same time.”
Originally, Lime was created to meet the clamoring demands of its very stylish, health-
conscience South Beach patrons. The popularity of the South Beach sensation quickly
became the dining choice for locals and celebrities alike.
As Lime continues to expand, it has never lost sight of its fresh focus. All Lime locations
have fresh produce delivered daily from local markets and its meats are charbroiled on
grills in an exhibition-style kitchen. Lime also maintains the lowest amount of food
needed every day to eliminate waste and ensure that all food is prepared fresh daily.
Guests also have the option of making their meal with whole wheat, multi-grain or low-
carb items. Lime is best known for its 50 variations of hot sauces and its signature
homemade salsa bar, consisting of six salsas.
But Lime doesn’t just stop at its fresh food to differentiate itself from its competitors.
Lime has set a new industry standard for the fast-casual, fresh-Mexican segment with its
high-end décor and casual-style atmosphere with the fast-casual convenience. Lime is
outfitted with Chicago brick and hammered copper countertops, and earth-tone faux-
finish walls adorned with custom dark hard wood trim and hanging lime baskets.
Lime Fresh Mexican Grill has locations in South Beach, North Miami Beach, Pembroke
Pines, and now Coconut Creek. In 2008, Lime expects to have four locations and has
plans to open a Midtown Miami and University of Miami location by early 2009. Lime
also has expansion plans of 10 stores or more a year beginning in 2009.
