     POSITION REPORTS TO: Director of Dietary Services or Designee

     Note that position descriptions may be revised in writing to add or delete duties at any time at the discretion of management.

I.             POSITION PURPOSE:

                  A. Responsible for preparation and delivery of all meals to patients including regular and therapeutic
                     diets.
                  B. Prepares foods for cafeteria consumption.
                  C. Responsible for general departmental sanitation.

II.            JOB PERFORMANCE CRITERIA ALL EMPLOYEES:


          A. Interactions with patients, families, physicians, referral sources, visitors, volunteers, co-workers,

I.            JOB PERFORMANCE CRITERIA DEPARTMENT SPECIFIC:


          A. Maintains safe food handling practices while preparing and serving food for patients, staff
             and visitors. Responsible for timely preparation and delivery of all meals to patients .

                1.       Ability to follow therapeutic diet menus and recipes and instruct dietary aides on same.                  1 2 3 4

                2.       Ensures foods are held at appropriate temperatures.                                                       1 2 3 4

                3.       Takes responsibility for sanitation of entire kitchen area. Maintains records of food and
                         equipment temperatures daily.                                                                             1 2 3 4

                4.       Ability to assume full charge of dietary department in the absence of Director and/or Lead Cook.          1 2 3 4

                5.       Able to make working decisions concerning dietary department as necessary.                                1 2 3 4

                6.       Able to instruct new employees on their duties.                                                           1 2 3 4

                7.       Responsible for tasting food and making necessary adjustments as needed for palatability.                 1 2 3 4

                8.       Ability to garnish foods attractively for plate presentation and quality.                                 1 2 3 4

                9.       Reports to Director any necessary changes/substitutions for meal service.                                 1 2 3 4

                13. Accurately forecasts amounts of food to be prepared and makes a concerted effort to minimize
                    leftovers.

                14. Maintains quality food standards with respect to content, texture and temperature.                      1 2 3 4

IV.          POSITION QUALIFICATIONS / REQUIREMENTS:

               A. Minimum Education
                                                        High school diploma or GED preferred.
               B. Minimum Experience:
                                                        1.   Training in preparation of food for therapeutic diets is desired.
                                                        2.   Recent healthcare setting cooking experience preferred.
                                                        3.   Special function cooking experience desirable.
               C. Required Certification:
                                                        Food handling safety and sanitation training.
               D. Physical Demands / Working            1. Able to follow specific diet menus and instruct dietary aides.
                  Conditions / Skills                   2. Able to ensure sanitation of department.
                                                        3. Knowledge of proper food preparation techniques including
                                                            seasoning and garnishment.
                                                        4. Ability to lift 50 lbs.
                                                        5. Machines/Equipment used: Convection oven, mixer, gas range,
                                                            grill, oven, toaster, steam tables, blender, food processor,
                                                            telephone, fax.
                                                        6. Environmental Conditions: Environmentally controlled, hot, cold,
                                                            cool; normal lighting, subdued lighting; noise; wet, slippery, hot
                                                            surfaces; sharp objects.
