Happy New Year; and for the Chinese New Year the Year of the Rat; hopefully not in your
processing plant. I would like to thank all of our members who attended the annual Christmas
and Holiday dinner meeting at the Swedish Cultural Center. We had very good attendance, free
wine, dinner, speaker (Mr. Mark Crowell, Culinex) and exceptional support from our corporate
friends who provided numerous raffle prizes. Thank you to all of the companies and individuals
who provided raffle prizes and place setting gifts. Attendees who brought in food donations
provided 350 pounds of food donations to Food LifeLine.

I would like to apologize for the shorter organics web cast recording than we had originally
planned to show. The live organics debate took place just a few days prior to our dinner and
regretfully the vendor working with national IFT had technical problems and it was not recorded.
Fortunately IFT did have another organics web cast that they provided to us. All future web
casts that we will show will be in the IFT library prior to our offering a free viewing as a PS-IFT
benefit. On the plus side we had more time to network and visit with friends and colleagues
during the holiday meeting.

January 15 our regional IFT meeting was held in conjunction with the annual Northwest Food
Processors Association's Expo. This year it was again held in Portland, Oregon. Ellen Bradley
from the Oregon section made the arrangements for the IFT program and speakers. This year
with a boost from a concurrent symposium session on Non-Thermal processing the IFT luncheon
had a larger than normal attendance. PS-IFT hosted a hospitality suite in the evening with a
selection of northwest wine and foods that included Columbia Crest wine, Jones soda, Cougar
Gold cheese and smoked sockeye salmon.

Our next event, on February 26, is our Suppliers Night at Double Tree SeaTac. This is free to all
registered members and is our major annual fund raiser. The funds raised allow us to provide
scholarships to several local food science college students (these will be presented during our
meeting on April 15, 2008) and to partially subsidize other activities and meetings. We are
hoping to have about 200 vendors participate during the evening. In addition, for a nominal
price, we will have a lunch and afternoon symposium highlighting culinary trends and what's
current at FDA. This will precede Suppliers Night additional information is in this newsletter.

What to look forward to from PS-IFT? Scholarships and member appreciation dinner will be
held April 15, 2008. Speaker, program and restaurant will be announced later. June 3, 2008 is
the annual golf tournament at Washington National; more information is in this newsletter. June
10, 2008 is our last meeting this season. It will start with a half-day symposium on Food Defense
followed by our dinner meeting. More details will follow, but the symposium and dinner will be

Program 1: Trend Profiling: Resetting the stage for the food industry through Forensic Intelligence
Suzy Badaracco, President, Culinary Tides
The goal of this educational session is to inspire food manufacturers to look beyond their front door or their competitor’s windows to see what,
when, and where the next food trends will emerge. Strategy cannot be based on what the industry is currently producing but what is on the horizon.
Forecasting focuses on the birth and death of trends, not the statistics generated once a trend hits an industry. This session will focus on the Health
and Wellness trends and explore what is occurring within research, government, corporate strategy, and consumer insight.

Program 2: Trends & Fads: Their Impact on Your Development Approach
Judy Lindsey, VP and General Manager of Product Dynamics (a division of RQA, Inc.) will tie in the treads towards developing projects to help
design and launch better products more efficiently while watching for forces that will conspire to ruin the creation. It also reviews some of the tools
that are available to monitor product quality and performance during and after launch. These tools include retail quality audits, sensory and analytical
evaluations, and various forms of consumer feedback. Judy Lindsey has 20 plus years of food industry experience working in all aspects of product
development. Her expertise is in new product development and the translation of consumer wants and needs to product design and formulation. Her
corporate experience has been gained working for the Kellogg Company and at ConAgra Foods, Inc. Judy has recently joined the consulting side of
the industry and is currently Vice President and General Manager of Product Dynamics, a Division of RQA, Inc

Stephanie Magill, FDA Public Affairs Specialist, will be available for questions regarding FDA activities.
