Policy:

It is the policy of SPCAA Head Start and Early Head Start to post evidence of
compliance with all applicable Federal, State, and local food safety and sanitation
laws, including those related to the storage, preparation, and service of food and
the health of food handlers. In addition, SPCAA Head Start and Early Head Start
will only contract with food service vendors that are licensed in accordance with
State and Local laws.

Procedure:

In order to assure the maintenance of food sanitation standards, SPCAA Head
Start and Early Head Start will conduct self-inspections in conjunction with
CACFP Nutrition Monitoring Review. The self-inspection will address the
following:
        Cleanliness of food before, during, and after preparation, including
           maintenance of correct food temperatures;
        Food handling practices;
        Dish washing procedures and equipment;
        Insect and rodent control;
        Cleanliness and maintenance of food preparation, service, storage,
           and delivery areas and equipment;
        Water supply;
        Garbage disposal methods; and
        Health of food service personnel.
