					              Café Manager: Charleston Café
                        Job Description

Job Title:                 Café Manager

Reporting to:         Visitor and Interpretation Manager

Pay:                  £8.50 per hour

Hours:                c. 35 hours a week, seasonal contract
                      ideally starting in mid-March running until
                      mid-November 2012, mostly over the café’s
                      opening hours, Wednesday to Sunday between
                      April and October.

The Charleston’s Café is open between April and October,
Wednesday to Sunday and Bank Holiday Mondays. Events that
require catering run on an ad hoc basis on Mondays and Tuesdays
and in the evenings.

Overall Objectives:        To   run   a   professional catering
                      operation, ensuring that standards are
                      maintained and that customer expectations
                      are met within agreed objectives. To
                      develop menus and manage staff.

Key Responsibilities:

      To set objectives and be responsible for the successful
       day to day management of Charleston’s Café. To draw up
       rotas to ensure the café is appropriately staffed at all
       times. To be an active member of the service team.
      To work with the Events Manager and the Executive
       Assistant to the Director to ensure suitable catering for
       events, workshops, private views and council meetings is
       provided and that this provision is adequately staffed.
      To work with the Festival Manager to ensure suitable
       catering for Charleston’s two literary festivals in May
       and September is provided and that this provision is
       adequately staffed.
      To recruit and manage suitable staff, assess employee
       performance, recognise potential and meet training needs
       as appropriate.
     To ensure that Charleston’s Café achieves, as a minimum,
      the financial targets agreed with the Charleston Trust in
      line with the budget and maximises all commercial
      opportunities.
     To hold regular café team meetings to communicate targets,
      standards required and information about the Trust’s wider
      activities.
     To   develop   and  evolve  the   visitor   experience  at
      Charleston’s Café, ensuring regular adjustments and
      improvements are both recommended and implemented.




Customer Service:

     To ensure that all customers are given a warm welcome,
      prompt and efficient service and that expectations are
      consistently exceeded.
     To liaise with the Assistant Visitor Manager to ensure
      groups bookings and events are catered for in line with
      agreed standards.
     To ensure all food is presented and served in line with
      agreed standards, being innovative in the method and style
      of presentation and food service.
     To evaluate and develop the menu regularly in conjunction
      with the Visitor and Interpretation Manager.

People Management

     To ensure training is carried out to meet the needs and
      requirements of individual employees.
     To ensure that all employees are knowledgeable and
      motivated in their roles through effective induction,
      accurate job descriptions and on the job training.
     To develop the team by empowering them, supporting them,
      encouraging them and maintaining an “open door” policy.
     To motivate and lead by example, ensuring you and your
      team have fun at work and are proud of your efforts.

Financial Management

     To ensure that Charleston’s Café has an accurate and
      efficient financial control system in place.
     To work with the Assistant Visitor Manager to maximise
      income from catering for group bookings and Gallery
      events.
     To control costs and achieve agreed financial targets
      whilst maximising all commercial opportunities.
     To ensure that the accounts department receive all the
      appropriate financial information and paperwork promptly
      and accurately.
       To ensure that Charleston’s Café adheres to strict banking
        and cash security procedures.
       To ensure that all standards of food preparation and
        service are established and achieved in line with the
        agreed budget.
       To look at ways of maximising income through effective
        purchasing from suppliers and creative merchandising.
       To monitor and order all necessary goods and equipment.

Health & Safety, Food Safety, the Environment:

       To ensure that the Charleston’s Café meets statutory
        requirements in Health and Safety, Food Safety and
        environmental   legislation   and   procedures,   including
        ensuring that all staff are appropriately trained.
       To conduct Food Safety and Health and Safety Risk
        Assessments and ensure that all standards and procedures
        with regard to Hygiene and Safety are adhered to at all
        times.
       To record and report all accidents within the Charleston’s
        Café.
       To ensure all equipment is well maintained and is in good
        working order and to make recommendations for renewal and
        replacement of equipment when required.
       To establish and maintain cleaning schedules.
       To ensure that all Charleston’s Café procedures are fully
        understood and practised by all employees.
       To attend all health and safety training courses as
        required.
       To   promote  and   encourage   environmental   improvement
        initiatives as appropriate within the Charleston’s Café.

Additional Responsibilities

       To undertake any other duties      as   may   reasonably   be
        requested of a Café Manager.

Criteria

   Successful background in catering
   Intermediate Food Hygiene Certificate or above
   Ability to display a real passion for food and customer
    service
   Excellent organisational skills
   Ability to plan ahead
   An analytical approach to problem solving
   Good negotiating skills
   Ability to work on own initiative
   Excellent communicator at all levels
   Financially and commercially astute
   Computer literate
   Excellent leadership and influencing skills
