Prior to completing the attached application, we want you to understand a little more about what
we’re up to. KITCHEN LTO was born from the fact that restaurant-quality food no longer needs
to be confined to the traditional restaurant model. For instance, mobile food trucks and pop-up
restaurants are two very non-traditional restaurant trends that are quickly becoming driving
factors for our industry.

KITCHEN LTO is what we’re calling a “permanent pop-up” restaurant that operates on a
quarterly basis and gives a rotating home to up-and-coming chef talent and their menu concepts.
Every three months, the restaurant changes – a new chef rotates in and introduces a new menu
concept. Simultaneously, a new design team re-designs the interior’s transformable design
elements. Essentially, it’s a limited time offer (hence the “LTO”), where a new restaurant is
born every quarter and up-and-coming chefs like yourself, get to take the reins for three months
and show the city of Dallas what you’re made of!

Our goal is to become the premier restaurant destination for Trinity Groves. In case you haven’t
heard, Trinity Groves will soon be home to a new “restaurant incubator”, the newest brainchild
of legendary restaurateur Phil Romano. Just as Trinity Groves will act as an incubator for
providing restaurateurs a lower cost venue for testing a concept’s viability, KITCHEN LTO
becomes an “incubator within the incubator” by providing a rotating home to new chef talent and
their ideas.

We are looking for chefs with at least five years of kitchen experience. You must be a strong
leader, highly organized, creative and cool under pressure. Culinary training is a must!

Applications must be received by June 15, 2012 in order to be considered for our first quarter of
operation (tentatively planned for Fall 2012). Our screening committee will review the
applications and announce finalists in late July. Judging will start in August via our social media
channels, as the public will be the ultimate judge in deciding who will chef the restaurant each
quarter.

If chosen, you will have the opportunity to contribute to a new and innovative, never-done-
before restaurant concept, focusing on helping the world discover the newest and finest chef
talent and their menu ideas.
