					cabbage with bacon
Fresh cabbage is available in supermarkets year round. Choose firm heads
that are green, not white (the older the cabbage, the whiter the leaves
appear).

SERVES 6-8
PREPARATION TIME: 45-60 MINUTES

I medium-size head cabbage 3—4 slices uncooked bacon, chopped
½ medium-size onion, finely chopped
1—2 garlic cloves, chopped
2 tablespoons oil
½ cup water
salt and pepper to taste


1. Slice the cabbage and soak it in cold water for 5 minutes. Drain.
2. Sauté the bacon, onion, and garlic in the oil for 5—10 minutes. Add
the cabbage and the water and steam over high heat in a covered pot for
20—30 minutes, or until the cabbage is tender. Stir occasionally. Add
additional water as needed. Season with salt and pepper to taste, and
serve.
