Select firm, unblemished, ripe round tomatoes, The best-tasting ones are
undoubtedly vine ripened. Tomatoes are a delicious source of vitamins A
and C.

SERVES 4
PREPARATION TIME:30-45 MINUTES

2 tablespoons vegetable oil
4 large, ripe round tomatoes, sliced ½-inch thick
salt and pepper to taste sugar
3/4 cup breadcrumbs
5—6 tablespoons grated Parmesan cheese
½—i teaspoon oregano
1/zi teaspoon parsley flakes
3—4 garlic cloves, finely chopped
5—6 tablespoons melted butter

1. Preheat the oven to 350°F.
2. Lightly grease the bottom of a baking dish with vegetable oil.
Distribute the tomato slices in the dish. Season with salt, pepper, and a
sprinkling of sugar.
3. Combine the breadcrumbs, cheese, oregano, parsley, garlic, and melted
butter. Spoon onto the tomato slices. Cover with foil and bake for 20—30
minutes, until the tomatoes are soft. Serve.
