      RAISONS

         FRESH BASIL ( CHOPPED)
               SEASONING:
BALSAMIC VINIGAR, OLIVE OIL, BLACK PEPPER,
          SALT, PINCH OF SUGAR
      POTATO, MAYO, SCALLIONS,
SMALL GHERKINS (CALLED CORNICHIONS)
           SALT & PEPPER
APPLE, CELERY, WALNUTS, MAYO,
LEMON JUICE (JUST A SPLASH IN
  THE MAYO), BLACK PEPPER
APPLE, GRAPES,
WALNUTS AND
SOUR CREAM
TIN OF KIDNEY BEANS,
   GREEN PEPPER,
      ONION,
      SESAME,
   ZESTY ITALIAN
                            ELAINESʼS QUICHE
SHORTCRUST PASTRY
500 gms PLAIN FLOUR
250 gms BUTTER
cold water to mix
chill a while

Use foil dishes (this pastry will do 3) 8 inch (21cm diameter) 1 inch deep / not the
sloped sided dish (buy 3 in a pack)
Roll pastry
prick base with fork all over / fridge chill 15 mins
place foil or greaseproof paper in pastry (bake blind) after about 15 mins take out
paper and cook about 10 mins more till 3/4 cooked

Add cooked onions and any other mix of ingredients
place cheese on and last add milk egg mixture to cover
sprinkle with cheese
cook 180 degrees for approx 40 mins till brownish (not BLACK) and slightly firm to
touch

BASE LIQUID (for 1 flan) :
 4 eggs + 125ml milk / salt and black pepper / a pinch mixed herbs
1 small onion (per quiche) chopped very small and fried without coloring (tiny blob
oil or butter)
150 - 175 gms Strong / tasty cheddar cheese (grated)

ADD ANY MIX OF FOLLOWING: need to use your own judgement for quantity
here!!!!
sliced mushrooms (cook a little first so water comes out)
Broccoli florets (cook leaving a slight bite / plunge in cold water to stop cooking)
(dry in kitchen paper before putting in quiche)
or asparagus tips (cook as above)
bacon chopped small and fried
flaked cooked salmon
sliced tomato (add to top if wish)
