                                         If you guys tried Filet-o-Fish @ McDonald India , the sauce taste great its Tartar
                                         sauce i found on web ..so while making fish fry at home i was thinking of making
                                         it..

                                         i suspect that the mayonnaise and tartare sauce you make at home will not be
    iwanttogoback                        much like the stuff that mcdonalds use.
    bling it on

                                         mayonnaise when home made generally consists of olive oil and egg yolks, but if
                                         you check out the ingredients list for commercially prepared mayonnaise you'll
                                         discover heaps of additives - flavourings, colours, preservatives, goodness knows
                                         what else. and the same is probably true of tartare sauce.

                                         as nick said, googling for recipes will find you heaps (never forget, google is your
                                         best friend    ), but seeing as how i'm already typing, i'll give you the domestic
                                         goddess's recipe for mayonnaise:

                                         2 egg yolks, at room temperature
    Location: perth
    Posts: 1,683                         225ml groundnut or sunflower oil
                                         75ml olive oil
                                         juice of 1/2 lemon

                                         add the yolks to a bowl and start whisking (hand whisk ok, but an electric whisk,
                                         NOT a food processor, will be a damn sight quicker).
                                         after a few minutes star adding the groundnut oil - a drop at a time (quite literally,
                                         do not hurry).
                                         when the mixture starts to resemble mayonnaise (thick and creamy) you can then
                                         add larger amounts of the oil at a time.
                                         next add the olive oil, in the same way - a small amount at a time.
                                         when the mayonnaise is thick, smooth and firm add a few drops of lemon juice, still
                                         whisking all the time.
                                         taste and add more lemon juice, salt and pepper as desired.

                                         My recipe, when in India is ,

                                         Using a stick baloon whisk, Braun. and a container not much wider than the whisk,
                                         ie tall and thin

                                         1....Separate the yolk and white

                                         2.....Grate some garlic

                                         3....Dried mustard, or bottled.

                                         Whisk yolk together with some of 1 and 2 to taste,[ less to start with]

                                         Add SLOWLY oil, sunflower, a dribble at a time, when the mixture starts to thicken
                                         add oil in a small stream, amalgamation should have happened, if it separates start
                                         again.

                                         Now you can add some of the egg white to loosen the mixture,

                                         If you wish you can now add some olive oil, for added flavour,

                                         Lastly add some lemon juice, or wine vinegar, lemon being easily available, gives
                                         the right tang, to my taste . Check seasoning and adjust.

                                         Sorry I am not a person who, like some in India cooks by the book.

                                         Taste all the time and adjust to your taste.

                                         This will taste fantastic. REAL FOOD

                                         And once you have your mayonnaise, and the recipe above is a good starting place,
    Darmabum                             you can add all kinds of things to it . . . finely diced onions . . . garlic(for ailoi) . . .

                                         any particular spice(s) you like . . . and, as a personal chef, I can and do make
                                         mayonnaise in a food processor. But for small batches a hand whisk is fine. Bon

                                         Hal, that is not what Tartar sauce in UK is: it is not sweet, not green, and it is
                                         served specifically with fish.

                                         some mustard. Use it fresh and keep prepared food in the fridge (not for long), raw
                                         eggs can cause food poisoning (salmonella), especially in a hot climate.

                                         Mayonnaise at Mc Donalds doesn't have to contain eggs, for industrial produced
                                         mayonnaise they use so many additives that they don't need eggs anymore.
