STEP 1: Traffic Light Eating
               “Traffic Light Eating
               is a simple way to
               categorize foods
               based on the quality
               of the food. Just like
               when driving a car, a
               traffic light tells us
               what to do.”
Traffic Light Eating ~ Green Light Foods
           • Foods that are grown, not
“go”         manufactured
           • Naturally Colorful
           • Usually can be eaten raw
           • Low in calories and high in
             nutrients
           • Includes all fruits and
             vegetables
           • Eat as much as you want
Traffic Light Eating ~ Yellow Light Foods

           • Yellow means “slow down”
           • Okay to eat every day, but not
             too much
           • Have more calories than Green
             Light Foods
           • Usually have more fat or sugar
             than Green Light Foods
           • Includes things like pasta*, rice*,
             bread*, nuts, yogurt, low fat
             cheese, & chicken

                               * Whole grains
Traffic Light Eating ~ Yellow Light Foods

          • A necessary part of a healthy
            diet
          • Provide different vitamins,
            minerals, and other nutrients
            than Green Light Foods
          • Preparation of Yellow Light
            Foods can cause them to
            become Red Light Foods
            (for example, fried chicken)
          • Too much of a good thing is
            still too much!
Traffic Light Eating ~ Red Light Foods
        • Red means “stop and think”
        • Make a different choice or eat a
          smaller portion
        • Lower in nutrients & higher in
          calories
        • Includes foods with artificial
          sweeteners, hydrogenated oils or
          high fructose corn syrup
        • High in fat and/or sugar
        • Includes foods like butter, cookies,
          donuts, white bread, soda, ham
          and other fatty meats

Label reading part 2 – Ingredients List
             Look for . . .
• Short list of ingredients (10 or
  less is best)
• Good words: whole grain, etc.
• “First” in line means “most” in
  box
• Words you can pronounce
• High – Protein High - Fiber
• Low sugar Low in saturated fats
                   Avoid . . .
•   Long list of ingredients (over 10)
•   Bad words
•   Dirty dozen
•   Multiple names
    – Sugar, fructose, sucrose, lactose,
    – MSG, Hydrolyzed Vegetable Protein,
      Sodium Caseinate
                        Bad Words
• High fructose corn syrup
• Hydrogenated or partially
  hydrogenated* oil
• Trans-fat
• Artificial color (anything with a
  number)
• Artificial flavor (Aspartame)
*Note: If ingredient lists include the term "partially
hydrogenated," it may have up to 0.5 grams of trans fat
in one serving.

        STEP 3: Into the Pantry
Just like when shopping in a grocery store have the
client indentify the items in their pantry, refrigerator,
and freezer as red, yellow or green light foods.

              • Each pad has 25 lists

• As client is identifying foods she wants to
  replace, begin making a shopping list for
  her.
• Discuss with your client foods in the green
  or yellow light category that might be a
  better choice.
• Put a star next to foods that are a good
  substitution for a food in their pantry,
  refrigerator, or freezer.
