Coconut Potato Masala

1.Onion-1 large sliced thinly
2.Tomato-2 chopped
3.Potato-1 large chopped
4.Coconut-1/2 cup
5.Coriander-1 bunch
6.Red chilli powder-1 tblspn
7.Coriander powder-1 tblspn
8.Tumeric powder-1 tsp
9.Garam masala-2 tsp
10.Oil-2 tblspn
11.Whole Garam masala-1tblspn
12.Ginger garlic paste-1 tsp
13.Mustard seeds-1 tsp
14.Cumin seeds-1 tsp                Preparation Time-20 min
15.Curry leaves-1 spring            Serve            -3
16.Hing-a pinch
17.Sugar-1 tsp
1.Take a cooker,add 1 tblspn of oil and heat it up.
2.Add Whole Garam masala and let them crackle.
3.Add the onion and fry for 5 min until golden brown.
4.Add the chopped tomato and fry for 3 min.
5.Add Red chilli powder,Tumeric powder,Coriander powder,Salt,sugar
and fry for 1 min.
6.Add the chopped potato and fry for 1 min.
7.Add 1 cup of water and pressure it for 2-3 whistle.
8.Grind coconut and half of the coriander in to a fine paste.
9.Add the paste in to the prepared masala and cook for 5 min.
10.Add garam masala add simmer for 1 min and remove from heat.
11.Then in a small frying pan add 1 tblspn of oil and heat it up.
12.Add mustard seeds,cumin seeds,Hing,Curry leaves and let them
13.Add this tempering in to the Masala and stir gently.
15.Garnish with some coriander.
       Important Tips for more tasty coconut potato masala
1.You can add some cashews to the coconut for grinding,it gives a rich
2.Fry the onion and tomato nicely until they form a thick masala.
3.U can even add Lime juice to it to give a edge taste.
4.Grind the coconut masala in to a fine paste.
5.Serve this with Fried rice,Paratha,chappati,Idi appam etc…..
