Ingrediants 1.Potato,Carrot,Raw banana,Cucumber-1 each cut in length wise 2.Peas -1/2 cup 3.Beans-5 cut in big pieces 4.Mango-5-6 pieces 5.Coconut-1 cup 6.Green chilli-4 7.Cumin-2 tblspn 8.Oil-2 tblspn 9.Dry Red chilli-1 piece 10.Tumeric powder-1/2 tsp 11.Mustard seeds-1 tsp 12.Curd-1 cup 13.Curry leaves-2 springs 14.Salt to taste Preparation Time-20 min Serve - 4 to 5 Method 1.Take a micro proof bowl add all the veggies and some salt and cook for 8 min. 2.Grind coconut,Green chilli,Cumin seeds to a fine paste. 3.Take a kadai and add the boiled vegetables and the paste and give a good stir. 4.Add Tumeric powder and salt. 5.Cook till the raw smell of coconut is gone.It will take around 6 min. 6.Now add the curd and cook for another 5 min. 7.In another one small frying pan add the 2 tblspn of oil and mustard seeds,cumin seeds,Red chilli,Curry leaves and let them crackle. 8.Pour this to the prepared aviyal. 9.Serve. Important Tips for more tasty Aviyal 1.Add any vegetables u like. 2.Grind the paste very finely,that gives a nice taste. 3.Add thick unsour curd for nice taste and consistency. 4.This taste best with sambar rice. 5.Cook the veggies nicely for a nice texture.
