        “How to Cater to Your Members – Providing the Best in Service and Value”
Every Club is capable of achieving their greatest potential through collectively utilizing their Members,
thereby driving revenues, retention and Member referrals. This interactive seminar will give you the
framework and the resources to help you develop your annual/quarterly catering marketing plans for
increasing revenues, while maintaining the integrity of your Club.
Kevin Brant, CPCE
Kevin is the owner of KMB Consulting and provides consulting and training for the catering industry. He
was formerly the Director of National Accounts for BBJ Linen, a premier linen rental company. Prior to
that, he spent 18 years with ClubCorp as a Private Events Director and also as the Vice President of
Private Events assisting in driving revenues for the Clubs, as well as providing additional marketing help.
He has been a Member of NACE (National Association of Catering Executives) since 1989 and has
served in many capacities both on the Chapter and the National level and currently is Immediate Past
National President. Kevin has been honored with NAFEM’s (North American Association of Food
Equipment Manufacturer’s) Doctorate of Food Service Award for his contributions to NACE and the
industry-at-large.

                                   “Today’s Food Trends”
With great pride, I am happy to announce that Sue Doody, founder and partner of Bravo Development,
LLC, owners of over 70 themed restaurants will be a featured speaker at the Spring Education. Brio,
Bravo and Lindeys are the noted restaurant names, big in this part of the country with estimated combined
sales into the several 100s of millions of dollars. Sue will speak on current trends with appetizer items,
entrees, menu mix and menu formats for effective and profitable impact to your club. Ms. Doody has
written a book entitled “As the Tables Turn:” A Biography of a Bistro. Copies are included with your
registration and attendance.

Later in the afternoon, Doug Fahrenholz, Senior Vice President of Wasserstrom, and his
equipment team will have a powerful, power point presentation on equipment matching new eco-
green, menu and labor consolidation trends. This promises to be very informative and matches
the other presentations of the day. Kitchen review and consultation examples will be provided as
additional operational tools for those who attend.




                                        Managers’ Roundtable
                                          4:00 pm – 5:00 pm
To pull this all together, as frequently requested, and per our strategic education initiatives, we
will wrap up the day with a LIVELY managers’ session…question-driven, experience-laden and
take-away discussion oriented. You may not want to leave early, as we will combine our
strengths, hopes and experiences to validate and utilize the great presentations of the day. Thanks

                                            July 27 & 28,
The OVC CMAA Summer Quarterly Meeting for 2008 will be held in Lexington, KY on July 27 and 28.
The accommodations are very near the already renowned and soon to be world famous Kentucky Horse
Park, home of the Alltech FEI World Equestrian Games 2010. The hotel, the Horse Park, and downtown
Lexington offer loads of family fun. The Sunday night social event will be a philanthropic Casino night
(in honor of our states Casino proposal, which if passed might make these nights at Clubs a thing of the
past) at historic Spindletop Hall. Families will have access to the swimming facilities during the social
event. Our Education on Monday will be a mini “Bourbon Trail” and will focus on Kentucky’s rich
Bourbon history with a tour, education session on Bourbon and food, and luncheon at Woodford Reserve
Distillery followed by an afternoon tour and Q&A at Buffalo Trace. This on-the-go education is a can’t
miss. Mark your calendars for July 27th and 28th now for a couple of days of fun and education in horse
and bourbon country.

The Columbus District has chosen “The Homeless Families Foundation” as the charity for
the Spring Meeting.

 Their Mission: To provide shelter, support, stability and nurturing for homeless children
      and their families as they prepare to acquire and maintain permanent housing.

Let’s help the families stay cool this summer by providing “fans” for the upcoming Hot
Summer Season. We will be taking $5 donations at the meeting.
